Ingredients

  • 4~6 Medium-sized apples (depends how many people) 蘋果
  • 1/4 tablespoon unsalted butter (per apple) 無鹽奶油
  • Pinch of brown sugar (per apple) 紅糖
  • cinnamon  肉桂粉
  • Rasins 葡萄乾
  • Vanilla ice cream 香草冰淇淋
  • Walnuts 核桃

Directions

蘋果洗淨,用水果刀跟小湯匙將蘋果核挖出,不要挖穿底部。再用牙籤在皮上戳一些小洞。
Wash apples, use a knife and spoon to core the apple, do not dig though the bottom.  Use a toothpick to poke tiny holes on the skin.

烤箱預熱華氏三百五十度。在蘋果中間放入葡萄乾,撒上肉桂粉。上面放上奶油和紅糖。放入加入半杯水的烤盤裡,放入烤箱烤三十分鐘。
Preheat oven 350F. Fill the core hole with rasins, and cinnamon powder. Place unsalted butter and brown sugar on the top of the core hole. Place apples in a baking pan, add 1/2 cup of water. Bake for 30 minutes.

拿出蘋果放涼一點,就可以切開四半。
Take out the apple and let it cool off for a few minutes. Cut apart 4 slices.

上面放上香草冰淇淋,撒上核桃粒。享受吧!
Put a scoop of vanilla ice cream and sprinkle with walnut on top. Enjoy!

Note: 選擇中型的蘋果比較適合一人一個吃的大小。烤好的蘋果要不要馬上吃,太燙,要等涼一下再放冰淇淋。用泡過蘭姆酒(Rum) 的葡萄乾會更香哦!
Medium-sized apples are good size for dessert. Don’t eat the apple right away when out of the ovan because it is very hot. Let it cool off a few minutes before putting the ice cream on top. It will be fragrant if using the rasins that were soaked in rum.

Ingredients

  • 10 eggs 雞蛋 (depends how many people)
  • 1/3 cup mayonnaise 美奶滋
  • 2 teaspoons dijon mustard 狄戎芥末醬
  • 1/2 teaspoon garlic powder 蒜粉
  • Salt and pepper 鹽,胡椒
  • Paprika 匈牙利辣椒粉
  • Parsley 巴西里香芹粉

Directions

在大的鍋裡放入蛋和冷水,水要蓋過蛋。以中火把水燒滾後,關火,加蓋燜至少十五分鐘。再把蛋放入冷水裡冷卻。剝蛋殼後將蛋對半切(縱向切)。
Put the eggs in a large pot and boil the eggs with water at medium heat. Remove from heat and let sit covered for 15 minutes. Put eggs in the cool water. Peel the eggs. Slice each egg in half (lengthwise).

將蛋黃挖出和蛋白分開放。蛋黃裡加入美奶滋,芥末醬,蒜粉,一點鹽和胡椒粉攪拌均勻。用小匙或擠花袋把拌好的蛋黃填回蛋白的凹槽裡。
Separate egg yolks and egg whites. Mash up the yolks and add mayonnaise, mustard, garlic powder, and a little bit salt and pepper in a bowl. Mix well. Use spoon or piping bag to put the egg yolk mixture back into each egg white “cup”.

上面撒上匈牙利辣椒粉和巴西里香芹粉。

Note: 魔鬼蛋通常是作為冷盤。是節慶和派對中常常出現的開胃小菜。上面再加點壽司的那種小魚蛋,看起來更豪華呢!

Deviled eggs are usually served cold. They are served as an appetizer and are a common holiday or party food. Add tobiko (flying fish roe) for more luxury look.

Ingredients

  • 3 lbs beef brisket (or beef shank) 牛腩 (或牛腱)
  • 1 onion 洋蔥
  • 2 carrots 紅蘿蔔
  • 4~6 tomatoes 紅蕃茄
  • 1 1/2 ~ 2 cups red wine 紅酒
  • 1 cup broth or water 高湯或水
  • 2 teaspoons dry thyme 百里香
  • 2 teaspoons dry parsley 洋香菜
  • 1 tablespoon tomato paste 蕃茄醬
  • 2 tablespoons flour 麵粉
  • 1 tablespoon butter 奶油
  • salt 鹽
  • Black pepper 黑胡椒粒

Directions

將牛腩肉切小塊,在開水裡川燙一下去血水後取出放入大碗裡。拌入麵粉,百里香和洋香菜粉,讓每塊牛肉都裹上麵粉和香料。把洋蔥,紅蘿蔔和蕃茄切成大塊。
Cut beef brisket into medium size pieces.  After cook in the boiling water to get rid off scum, put the beef in a big bowl.  Mix in flour, thyme and parsley.  Make sure every piece of beef is covered with flour and thyme and parsley.  Cut onion, carrot and tomato into big pieces.

在大鍋裡用奶油炒香洋蔥和黑胡椒粒, 再把裹好麵粉的牛肉下鍋一起煎。
Saute onion and black pepper with butter in a big pot, add the beef and saute together.

倒入紅酒,高湯,紅蘿蔔,蕃茄,番茄醬和適量的鹽,蓋鍋以小火燉煮一個小時。中間可以打開翻動一下。
Pour in red wine, broth, carrot, tomato paste and salt,  cook in low heat with the lid covered for 1 hour.  Open the lid and stir a little while cooking.

等到肉燉爛了,汁也稍微收乾了就好了!
It’s ready when the meat is tender and the sauce is thicker.

法式紅酒燉牛肉 Boeuf Bourguignon

Note: 紅酒不用用太貴的,一般的就好。百里香和洋香菜用新鮮的是最好了啦!沒有新鮮的用乾燥的粉也可以。還可以加入芹菜和蘑菇一起煮。
Do not need to use expensive red wine, regular is good enough for cooking.  Dry thyme and dry parsley are good to use if there are no fresh ones.  You may also add celery and mushroom for even richer taste.

Ingredients

  • 3 cups bread flour, more for dusting 高筋麵粉
  • 1/4 teaspoon instant yeast 乾酵母
  • 1 1/4 teaspoons salt 鹽
  • 1 1/2 cups water 水
  • Wheat bran or Oats 小麥麩皮或麥片

Directions

在一個大碗裡放入麵粉,酵母和鹽。再加 1.5 杯的水,並攪拌麵團。麵團會蓬鬆且黏稠稠的。用保鮮膜覆蓋碗,讓麵團休息至少12~18小時 (看氣候溫度而定,  )麵團會膨脹一倍大。
Combine flour, yeast and salt in a large bowl.  Add 1 5/8 cups water, and stir until blended; dough will be shaggy and sticky. Cover bowl with plastic wrap. Let dough rest at least 12 ~ 18 hours (depends on temperature,) dough will be about double as big.

當麵團好時,表面會佈滿氣泡。把麵團折一次或兩次並撒上麵粉和小麥麩皮。將麵團做成一個球形並用麵粉和麩皮灑滿表面,再用保鮮膜覆蓋休息約一到兩個小時。當麵團超過雙倍的大小並用手指戳不會輕易彈回時就可以進烤箱。
When dough is ready when its surface is dotted with bubbles. Sprinkle it with flour and wheat bran and fold it over on itself once or twice until all covered with flour and wheat bran,  shape dough into a ball. Cover loosely with plastic wrap and let rest about 1 hour. When it is ready, dough will be more than double in size and will not readily spring back when poked with a finger.

把一個6 – 8升的荷蘭烤鍋(重型加蓋烤鍋像是鑄鐵,搪瓷,耐熱玻璃或陶瓷鍋都可)放入烤箱,和烤箱一起預熱到華氏450度。當麵團準備好了時,小心把烤鍋蓋打開將麵團滑入鍋內 (小心!烤鍋非常燙!)如果麵團分佈不均就搖一搖,它烘烤時會平順的。蓋上蓋子先烤三十分鐘。
Preheat oven to 450 degrees. Put a 6- to 8-quart heavy covered pot (cast iron, enamel, Pyrex or ceramic) in oven as it heats together. When dough is ready, carefully open the lid and slide dough over into pot (be careful for the hot pot!)  Shake pan once or twice if dough is unevenly distributed; it will straighten out as it bakes. Cover with lid and bake 30 minutes.

打開蓋子再烤十五分鐘,直到麵包表皮成漂亮焦黃色。拿出放在架上降溫。
Remove lid and bake another 15 minutes, until loaf is beautifully browned. Cool on a rack.

Note: 做麵包不用一直揉麵團了!只要少少的酵母,加上長時間的發酵,才會醞釀出獨特的麵包香。而這種用荷蘭烤鍋放在烤箱裡烤的方式可以鎖住麵團水分,讓麵包呈現外皮酥脆,裡面鬆軟。
Making bread without keep kneading the dough! Just a bit of yeast, and with a long period of fermentation will create a unique bread aroma. Using a dutch oven to bake can seal in the moisture of the dough, so that the bread will show the crispy skin and soft inside.

  • 3 ~ 4 large russet potatoes 大馬鈴薯
  • 2 tablespoons olive oil 橄欖油
  • 1 teaspoon paprika 辣椒粉 (西式)
  • 1 teaspoon garlic powder 蒜粉
  • 1 teaspoon onion powder 洋蔥粉
  • 1/4 teaspoon salt 鹽
  • 1/2 teaspoon black pepper powder 黑胡椒粉

Directions

烤箱以華氏425度(攝氏220度)預熱。洗淨馬鈴薯。連皮切成楔塊狀。和橄欖油,辣椒粉,大蒜粉,洋蔥粉和鹽混合均勻。在微波爐高溫熱四分鐘。
Preheat oven to 425 degrees F (220 degrees C). Wash potatoes well. Cut potatoes into wedges (with skin). Mix in olive oil, paprika, garlic powder, onion powder and salt together. Cook in microwave oven on high for 4 minutes.

把馬鈴薯條在烤盤上排一層排好,先烤十分鐘,翻面再烤十二分鐘直到呈金黃色。
Spread the wedges in a single layer on the baking sheet. Bake the potatoes for 10 minutes. Turn, and continue bake until golden brown, about another 10 minutes.

Note: 也可以用地瓜來做。薯條先微波再烤是可以節省烘烤的時間,也可以直接烤,會比較乾脆一點。

Ingredients

  • 6 chicken leg quarters 全雞腿
  • 1/4 cup chopped rosemary 迷迭香 (切碎)
  • 1/4 cup salt 鹽
  • 1 tablespoon black pepper 黑胡椒
  • 2 tablespoon cooking wine 料酒
  • 4 cloves of garlic 大蒜(拍扁)

Directions

拿一個大鍋,放入所有的材料,加水蓋過雞腿。放入冰箱浸一晚。
Place all chicken legs in a big pot, add all seasonings and water to cover all meat. Put inside the refrigerator for overnight.

將雞腿皮向上在烤盤上排好(倒一杯水在底盤裡以免滴下的油汁被烤焦,也保持肉質濕潤。)上面再放些迷迭香和黑胡椒。
Place chicken legs skin side up in a roasting pan (pour a cup of water to the bottom tray to avoid drippings over burned, and also keep moisture. ) Sprinkle some rosemary, and pepper on skin side.

Roast in the oven

放入烤箱以華氏三百五十度烤約四十分鐘,或直到雞腿呈金黃色且皮酥脆。
Roast in a 350°F oven for about 40 minutes or until the chicken legs are golden and crispy.

Note: 鹽漬過的雞腿再烤可以保持肉質濕潤,並幫助入味。迷迭香用乾燥的或新鮮的都可以。
Brining a chicken can help keeping the meat moister, and also helps the taste more flavorful. Either dried or fresh rosemary is ok to use for this dish.

Ingredients

  • 40 oz. (5 cups) frozen corn 冷凍玉米粒
  • 1 cup whipping cream 鮮奶油
  • 1/2 cup milk 牛奶
  • 1 tsp salt 鹽
  • 6 tsp sugar 糖
  • 2 tsp melted butter 融化的奶油
  • 2 tsp flour 麵粉
  • 1/2 cup Parmesan cheese 起士粉
  • pepper (optional) 黑胡椒

Directions

在一個鍋裡混合所有的調味料,除了奶油和麵粉,加入牛奶,小火煮五分鐘至沸騰。
混合融化的奶油與麵粉至鍋中,再加入玉米粒拌勻。轉移到烤箱安全的玻璃烤盤。
上面撒上奶酪,用 ”Broil“ 烤直到棕色,約五分鐘。
Combine all except butter and flour in a pot, adding milk last. Bring to a boil.  Simmer for 5 minutes.
Blend butter with flour.  Add mixture to corn. Mix well.  Transfer into oven safe glass dish.
Sprinkle with cheese.  Broil until brown, approx. 5 minutes.

Note: 這道菜要趁熱吃,最好從烤箱拿出就馬上享用。
Serve immediately.  This dish is meant to be enjoyed while it’s still warm.

Ingredients

  • 4 chicken breasts (cut into 12 thin pieces) or chicken thighs 雞胸肉或雞腿肉
  • 1 egg 蛋
  • 2 tablespoon flour 麵粉
  • 1/2 teaspoon ground pepper 黑胡椒粉
  • 1 teaspoon salt 鹽
  • 1 teaspoon sugar 糖
  • 1/2 onions, diced 洋蔥
  • 4 tomatoes 番茄
  • 2 cloves garlic, minced 大蒜
  • 1 tablespoon basil 羅勒
  • 1 tablespoon white wine 白酒

Directions

雞胸肉斜切共十二薄片,每片拿刀背敲打幾下。把所有的雞片放入一個大碗,拌入1/2小匙鹽,打好的蛋汁和麵粉。
Chicken breasts cut into 12 thin pieces, tap each piece with the back of the knife. Put all pieces into a big bowl and mix in 1/2 teaspoon salt, egg and flour.

洋蔥,番茄切小粒。先熱鍋加油,把洋蔥粒以中火炒至微微焦,再將番茄粒,1/2 小匙鹽,糖,黑胡椒,白酒加入轉小火蓋鍋煮十五~二十分鐘。打開鍋蓋加入切碎的羅勒繼續燒到醬汁比較濃稠,約十分鐘。
Dice onion and tomato.  Heat up a pan with cooking oil, brown the onion first and then add tomato, 1/2 teaspoon salt, sugar, black pepper powder, white wine , simmer covered in low heat for 15 ~ 20 minutes.  Open the cover, add chopped basil and continue to simmer for another 10 minute or until the sauce gets thicker.

準備一個不沾鍋,熱油,加入雞片煎至兩面呈金黃色。最後在雞扒上淋上煮好的醬汁。
In a non-stick pan, add cooking oil and heat to medium high,  pan fry chicken fillets and brown on each side. Pour sauce over the chicken fillets.

Note: 也可以用雞腿肉代替雞胸肉!上面撒些起士粉更是小孩的最愛!這個醬汁也可用在義大利麵上。
You can also substitute chicken breast with chicken thighs for different texture.  For kids, sprinkle with Parmesan cheese on the top if desired.  The sauce can also be used as spaghetti sauce for spaghetti.

Ingredients

  • 3 cups bread flour 高筋麵粉
  • 1 cup whole wheat flour 全麥麵粉
  • 1 tablespoon
  • 1 1/4 warm water 溫水
  • 1 teaspoon salt 鹽
  • 1 tablespoon sugar 糖
  • 1 tablespoon coconut oil or butter 椰子油或奶油
  • 1 package of yeast or 2 teaspoons yeast 乾酵母
  • 1/4 cup Goji berries 枸杞子
  • egg wash (1 egg +1 tablespoon water)

Directions

麵糰製作有兩種方式:
Two ways to make dough:

1. 傳統式 – 將麵粉, 糖, 溫水, 奶油和酵母放入大盆中, 先用筷子攪至不見水分, 再用手揉到光滑 (也可用攪拌機)。用濕布蓋住靜置一至二個小時 (夏天快, 冬天慢些), 等到麵團發成一倍大, 手指壓入不會彈回即可。
Traditional way – Put bread flour, wheat flour, sugar, warm water, butter and yeast into large bowl. First stir with chopsticks until all water is gone. Then rub the dough until smooth (can also use mixer). Cover with a damp cloth for one to two hours (faster in the summer, slower in the winter.) Wait until the dough grows double.

2. 懶人式 – 將麵粉, 糖, 溫水, 油和酵母放入麵包機。用 “dough” 的功能就好了。
Lazy way – Put bread flour, wheat flour, sugar, warm water, butter and yeast into bread maker. Use “dough” function.

烤箱預熱400度華氏。麵團用刀切一半,  每一半整型為圓橢狀,放在撒上麵粉的烤盤加蓋放置十五至二十分鐘。
Cut dough in half. Make each half into round shape and put on a floured bake pan for 15 to 20 minutes.

或把其中一半的麵團分成十二份,放入做小蛋糕的烤盤中(裡面撒麵粉。)
Or,  divide half of the dough into 12 small dough, and put in a cupcake pan (sprinkle flour in each cup.)

將準備好的麵團上刷上蛋汁。

放入預熱的烤箱,立刻將烤箱溫度降至350度,並噴水保溼。五分鐘後再噴一次水。烤二十至二十五分鐘。拿出待冷。
Put in the preheated oven, reduce temperature to 350 degree and spray water to keep moisture. Spray again after 5 minutes. Bake for 20 to 25 minutes.  Take out of the oven and cool down.

Ingredients

  • 1 can biscuit dough (8 biscuits) 現成biscuit罐頭麵團
  • 12 ~ 15 big shrimps, chopped 大蝦,切小段
  • 2 tablespoons flour 麵粉
  • 1 egg 蛋
  • 1 teaspoon salt 鹽
  • 1/2 teaspoon white pepper powder 白胡椒粉
  • 1/2 garlic powder 蒜粉
  • 2 teaspoon cooking wine 酒
  • 1 tablespoon minced shallots 紅蔥頭,切細
  • Paprika powder 辣椒粉 (西式)

Directions

現成 biscuit 罐頭麵團放室溫10分鐘。烤箱預熱350F度。將大蝦洗淨去腸泥剁成小段,和麵粉,打好的蛋,鹽,白胡椒粉,蒜粉,酒,切細的紅蔥頭混合成為蝦麵糊。
Put the can of biscuit at room temperature for 10 minutes. Preheat oven to 350F degree.  Clean shrimps and chop into small pieces.  Mix in flour, egg, salt, white pepper powder, garlic powder, wine and minced shallots into shrimp batter.

打開罐頭,將每一個小麵團切一半,整型成小圓麵皮(用手捏捏壓扁)。
Open can, separate each dough and cut in half. Make each half dough into a flat, rounded shape crust.

把麵皮放入做小蛋糕的烤盤(邊邊凸起,中間凹下)。再將蝦麵糊放入每一個麵皮的中間,不要太滿。
Put crust into each cupcake baking pan and make a dish shape. Fill in shrimp batter in the middle, not too full.

放入預熱好的烤箱內烤 12 ~15 分鐘。拿出上面撒點 Paprika powder。
Put into preheated oven for 12 ~ 15 minutes.  When done, sprinkle some Paprika powder on the top.

Note: 現成的 Biscuit 罐頭省了很多時間,在各個超級市場都有賣。蝦子切小段比較有嚼感,喜歡細密的感覺就把蝦剁成泥。
Using ready-made biscuit dough can save you a lot of time. You can get it at any supermarkets.  To make a chewing taste, cut shrimp cut into small pieces; to make a soft taste, chop shrimps into paste.

  • 2/3 cup whole milk 牛奶
  • 1/2 cup blueberries 小藍莓
  • 1 egg york, beaten 蛋黃

烤箱預熱至400度(華氏)。烤盤上鋪好烤紙。麵粉和泡打粉混在一個大碗裡。再將奶油(冷的)和糖加入麵粉裡揉成粉狀。在麵粉中間加入牛奶輕輕揉在一起,麵團會黏黏的(不要揉太久)。
Preheat oven to 400 degrees. Line with baking parchment on the baking sheet. Mix flour and baking powder into a big bowl. Put butter (cold) and sugar into flour to form a crumble. Add milk in the center and knead gently together, dough will be sticky (not to over mix).

On a baking sheet, line with baking parchment and sprinkle flour on the surface, form 8 small doughs. Lightly put blueberries in the center and close on the top. Brush tops with egg yolk. Allow to stand for 15 minutes.

放入預熱烤箱中烘烤,直到麵團膨脹或表面成黃金色約15分鐘。拿出待涼。
Bake in preheated oven until risen and lightly golden for 15 minutes. Remove to cool.

Ingredients

  • 1 1/3 all-purpose flour  麵粉
  • 1 cup quick-cooking oats 燕麥
  • 2 tablespoons brown sugar 紅糖
  • 2 teaspoons baking powder 泡打粉
  • 1 teaspoon salt 鹽
  • 1 1/3 milk 牛奶
  • 2 eggs 蛋
  • 1/2 vegetable oil 油
  • 1 fresh blueberries or frozen blueberries 藍莓

Directions

將所有的材料混合一起,最後再加入藍莓(如果用冷凍藍莓,不要先解凍),讓麵糊放置五分鐘。
Combine all ingredients except blueberries. Mix in blueberries (if using frozen blueberries, do not thaw before adding to batter) and stand for 5 minutes.

將麵糊倒入威化機烤五分鐘,或直到黃金色(參考威化機的說明書。)吃時在上面撒上糖粉和楓糖漿。
Bake in a waffle iron for 5 minutes or until golden brown. Sprinkle some powder sugar and maple syrup before serving.

Note: 加了燕麥的威化餅要比一般的威化餅多一點口感。烤的時間會比較久一點。
The oats waffle has a little more texture than the usual waffle which needs to bake a little longer.

  • 1 package of ready-make Corned Beef  Brisket 醃牛肉
  • Horseradish 辣根醬
  • Water 水

Directions

市售醃牛肉一包,買回打開包裝洗淨牛肉。在一個深鍋放入牛肉,放水蓋過牛肉煮開。再放入附上的佐料包,小火煮三小時。
Open the package and wash the brisket. Put the corned beef brisket in a large pot, cover it with water and bring it to broil. Add the attached seasoning in the water and simmer for 3 hours.

煮好後拿出切片。上面放上辣根醬。
Cut thin slices and top with horseradish.

  • 4 mangoes 芒果
  • 2 packages of Knox plain gelatin 無味果凍粉
  • 2 cups water 水
  • 1/2 cup evaporated milk 淡奶
  • 1/2 cup sugar 糖

Directions

芒果放入打果汁機裡打成泥狀。
Put mangoes into a blender for a few minutes until mashed.

在一小鍋將果凍粉加水,用小火煮溶,再加入糖。糖溶解後,熄火再加入淡奶和芒果泥拌勻。
Cook gelatin powder and water in a small pot using low heat. Add sugar. After sugar is dissolved, turn off the heat and add evaporated milk and mashed mango.

倒入模型中,放到冰箱冷卻凝固。吃的時候淋上淡奶。
Pour into molds and put inside the refrigerator fro cooling. When eating, top with evaporated milk.

Note: 用有花邊的模型,倒扣出來的布丁,  再加點水果會更漂亮。
You can use molds with different shapes. It will be more prettier when placing the pudding upside down and decorate with fruits.

Ingredients (make two rolls)

Part A:

  • 8 egg york 蛋黃
  • 1/3 cup + 1 tablespoon (or 60 g.) sugar 糖
  • 1/3 cup + 2 teaspoons (or 90 g.) oil 油
  • 1/3 cup + 2 teaspoons (or 90 g.) water or milk 水或牛奶
  • 1 cup + 2 tablespoons (or 140g.) all-purpose flour 麵粉
  • 1 teaspoon baking powder (optional) 泡打粉

Part B:

  • 8 egg white 蛋白
  • 1/3 cup (or 80 g.) sugar 糖
  • dash of salt 鹽

Part C:

  • 2 cups of heavy whip cream 鮮奶油
  • 2 tablespoons sugar 糖

Directions

將蛋黃和蛋白分開。把 Part A 的部份裡的蛋黃,油,糖和水(或牛奶)攪勻。麵粉用篩子過篩加入蛋黃。攪拌到光滑而且有光澤。
Separate egg york and egg white. Whisk Part A: egg york, oil, water (or milk) together. Use sifter for flour and slowly add in the egg york mix. Whisk until shiny and smooth. Set aside.

烤箱預熱 350F。用電動攪拌器開高速攪拌 Part B 先加鹽。等蛋白打到有泡泡出現,再分三次加糖攪拌約五分鐘。
Preheat oven to 350F. Using electric mixer, beat Part B on high, add salt first. Add sugar after bubbles show, do in 3 increments. Continue beating approx. 5 minutes until stiff.

在一個 12″x17″ 的烤盤上放好烤紙(parchment paper),再把四邊用訂書針訂好。
Place parchment paper on a 12″x17″ baking sheet. Secure four corners using stapler.

倒入烤盤裡,鋪平表面。敲幾下去除裡面的空氣。以 350F 烤 十五分鐘。
Pour mixture on to the baking sheet, even out the surface. Drop sheet onto table to eliminate air bubble. Bake at 350F for 15 minutes.

烤好後,放在架上待冷卻。再把冷卻好的蛋糕和烤紙分開。從中切一半備用。一半的蛋糕放在另一張蠟紙上。
After bake, put on a wire rack for cool down.  Remove the parchment sheet after the cake is cool. Cut half in the middle. Put half of the cake on another wax paper.

把不整齊的邊切掉。在起頭捲的地方輕劃上三道刀痕(比較好捲),並在另一端切斜角(最後捲起來比較平順)。
Cut away the edges to make it level. Slice 3 lines slightly on the beginning of the cake sheet, and cut oblique angle at the end.

用電動攪拌器把 Part C 鮮奶油加糖打到起泡, 約七分鐘。再將鮮奶油鋪在蛋糕上。
Using electric mixer, beat Part C on high for 7 minutes. Put whipping cream on the cake.

用一桿麵棍放在要捲的一邊的紙下面,慢慢捲起,不要太緊以免鮮奶油被擠出。最後兩頭的紙包好放入冰箱冰15 分鐘。冰好的瑞士捲,就可以拿出切片擺盤了。
Put a rolling pin under the wax paper at the beginning of the cake. Roll up slowly but not too tight. Secure both ends and put inside the refrigerator for 15 minutes. Cut into slices. enjoy!

Ingredients

  • 1 can of biscuit dough (8 giant biscuits) 比司吉麵團罐頭
  • 2 cup of chicken, cubed 雞肉
  • 2 tablespoons Caesar Salad dressing 凱撒沙拉醬
  • 1/2 cup Parmesan cheese 帕馬森乾酪粉或絲
  • 1 cup romaine lettuce, shredded  蘿蔓沙拉

Directions

打開比司吉罐頭。分開每一個放入烤小蛋糕的烤盤。
Open the can of biscuit dough, put each one in the baking cupcake pan.

雞肉蒸熟切小塊。拌入凱撒沙拉醬。
Chicken steamed and cut into small pieces.  Put small amount chicken mix in the middle of the biscuit dough.

Bake in 400F for 10 ~ 12 minutes. Cut romaine lettuce into small strips.

Black Pepper Sauce 黑椒汁:

  • 1/2 onion 洋蔥
  • 2 tablespoons oyster sauce 蠔油
  • 1 tablespoon soy sauce 醬油
  • 2 tablespoons of chopped garlic 蒜末
  • 2 tablespoons of black pepper 黑胡椒
  • 1 tablespoon of sugar 糖
  • 1 tablespoon butter 奶油
  • 4 tablespoons of water 水

Directions

將豬排洗淨, 用肉錘拍打。
Wash pork chops and tenderize with a meat hammer.

黑椒汁做法:在鍋中加奶油炒洋蔥至透明,加蒜粒和其它的調味料一起用小火煮十分鐘。
Black Pepper Sauce: Stir fry onion with butter until the color turns to transparent; add chopped garlic and the rest of the ingredients; simmer for 10 minutes over low heat.

在平底鍋中放一匙油,將豬排煎至熟。再將黑椒汁澆在豬排上即可。
Heat 1 tablespoon oil in a pan, pan-fry pork chops over medium heat until done. Pour sauce over pork chops.

  • 2 ~3 chicken beasts 雞胸肉
  • 1 cup of chopped carrot 紅蘿蔔
  • 1 cup of chopped celery 芹菜
  • 1 can of Cream of chicken 奶油雞湯罐頭
  • 1 can of Cream of celery 奶油芹菜罐頭
  • 1 package of Pennette pasta 管通心粉
  • 1 tablespoon butter 奶油
  • Pepper

Directions

將雞胸肉切小塊,紅蘿蔔削皮切小塊,芹菜切小塊。
Cut chicken breast into small pieces, carrots peeled and cut to small pieces, celery cut into small pieces.

煮一鍋水放入通心粉煮熟。撈起瀝乾。
Cook pasta in a pot of  boiling until done. Drain.

在鍋中炒熟雞肉,  紅蘿蔔和芹菜。把通心粉,奶油,Cream of chicken,Cream of celery,一點胡椒粉和炒好的雞肉,  紅蘿蔔和芹菜一起放入烤鍋中拌勻。
Sauté chicken, carrot and celery in pan. Put pasta, butter, cream of chicken, cream of celery, a little black pepper and cooked chicken, carrot and celery in a casserole dish.

放入烤箱以350 F烤十五到二十分鐘即可。
Bake uncovered at 350 F for 15-20 minutes.

Peach n Cream Jello 水蜜桃鮮奶油果凍

Ingredients

  • 2 packs of 6 oz peach jello
  • 3 packs unflavored Knox gelatin
  • ½ pint of heavy whipping cream 鮮奶油
  • 3 cups boiling water
  • 2 cups water
  • 1 and ½ cups cold water
  • one can diced peaches

Directions

把所有的果凍粉混合好。加入開水攪拌均勻,如果沒有攪拌好,底部會結塊。再加冷水攪拌,加入鮮奶油,全部攪拌好到有滑稠狀, 再加入水蜜桃塊。放冷卻直到果凍和鮮奶油分開, 大約十分鐘。放入冰箱冷藏到完全凝固。

Mix all dry ingredients.  Add boiling water and stir well.  If you don’t stir well, the bottom will have lumps.  Add cold water and stir.  Add whipping cream.  Stir until liquid is all creamy.  Add diced peaches. Let cool until the jello separates, about 10 minutes.  Refrigerate until firm.

  • 2 cup fresh or frozen mix berries (strawberries, blueberries, raspberries, boysenberries)
  • 1/2 cup ice
  • 1 cup orange juice
  • 1 tablespoon flaxseed (grinded)
  • 2 tablespoon honey
  • Mint

Directions

將所有的材料都放入果汁機打到平滑。不夠可以再加蜂蜜增加甜度。可以放薄荷在上面當裝飾,也可增加香氣。

Add all ingredients to a blender until smooth. Add more honey if needed.
