Ingredients

  • 10~12 oxtails 牛尾
  • 10 medium tomatoes 中型番茄
  • 1 ~2 onions 洋蔥
  • ginger 薑
  • star anise 八角少許
  • black peper 黑胡椒/花椒少許
  • 1/2 tablespoon brown sugar 紅糖
  • 2 tablespoons cooking wine 料酒
  • 2 tablespoons soy sauce 醬油
  • 3 tablespoons ketchup 番茄醬

Directions

牛尾放入滾水燙過,撈出洗淨血水。
Boil meat to get rid of scum, rinse clean.

在鍋裡加油爆香薑和八角,花椒。再把牛尾放入一起煎一下直到兩面上色,加入水(剛蓋過牛尾),酒和醬油,大火煮開後蓋鍋以中小火煮一個半小時直到剩下一半的湯汁。
In a large pot with a little hot oil, saute ginger, star anise, pepper and brown sugar. Add the meat and brown all the sides. Add cooking wine, soy sauce and enough water to cover the meat. Cook in high heat until boiling and then turn down to medium low heat, covered and cook for 1.5 hours until liquid is reduced by half.

將煮好的牛尾拿出。剩下的湯汁把雜質撈掉,湯備用。另一鍋炒香番茄,洋蔥,等番茄炒成糊狀,再加入牛尾,番茄醬和適量剛剛留下的牛尾湯汁,加入適量的鹽(先嚐嚐看),以中火煮三,四十分鐘,。如想吃湯汁多一點的就加一些水。
When the meat gets tender, remove the meat from the pot and set aside on a plate. Add tomatoes and onions into another pot, saute until tomatoes are soft. Add meat, ketchup and previous meat juice, and season with a little bit salt (taste first), cook in medium heat for 30 ~40 minutes. Add more water if you like more soup.

Ingredients

  • 1  1/2 cups Sweet Rice (glutinous rice)白糯米
  • 1 cup Black Glutinous Rice 黑糯米或紫米
  • 2 cup seaweed (shredded) 海苔細絲
  • 1/4 cup sweet rice (glutinous) flour 糯米粉
  • 1/4 cup sweet potato flour 地瓜粉
  • 1/4 cup all-purpose flour 麵粉
  • 1 1/2 cup water 水
  • 1 tablespoon olive oil 橄欖油
  • 1 teaspoon salt 鹽
  • Sweet chili sauce 甜辣醬
  • Soy sauce paste 醬油膏
  • Peanut powder 花生粉
  • Cilantro 香菜

Directions

白糯米和黑糯米(紫米)泡水至少三~四小時。
Soak all rices in water for at least 3 ~ 4 hours.

在方形的容器裡放入泡好瀝乾的米,糯米粉,地瓜粉,麵粉,海苔(我用包壽司的海苔剪碎碎),橄欖油,鹽和水混合均勻。放入蒸鍋裡蒸四十分鐘。
Put all rices (drained), sweet rice flour, sweet potato flour, flour, shredded seaweed, olive oil, salt and water in a rectangular or square container. Steam for 40 minutes.

拿出稍涼後再切塊(太熱太黏不好切)。上面刷上點醬油膏,沾些花生粉,再加上甜辣醬和香菜就好了!
Cut into pieces when cool down a little (too sticky to cut while still hot).  Brush on soy sauce paste, dipped some peanut powder, and add sweet chili sauce and cilantro on top.

Note:
1. 黑糯米又叫作紫糯米或紫米。沒有白糯米那麼黏。黑糯米含豐富維他命和礦物質並有健脾暖肝、明目活血的功能。Black glutinous rice is also called purple glutinous rice or purple rice. Not as sticky as white glutinous rice. Black glutinous rice is rich in vitamins and minerals, and has many benefits for liver, spleen, eyesight and blood circulation.
2. 想要口感硬一點的可以用在來米粉代替地瓜粉。做好的米糕塊,先用一點油在鍋裡煎一煎外皮,還可以來做成三杯米糕哦!Use regular rice flour (non-sticky) instead of sweet potato flour for a little harder taste.

Ingredients

  • 1/2 package of rice sticks 新竹米粉
  • 3~4 mushrooms 香菇
  • 1/2 cabbage 包心菜
  • 1 carrot 紅蘿蔔
  • 2 green onions 蔥
  • 1/2 cup soy sauce 醬油
  • 1 teaspoon white pepper 白胡椒粉
  • 1 tablespoon dry shallots 油蔥酥
  • Sesame oil 麻油
  • Ground pork (optional) 絞肉

Directions

拿出一半的新竹米粉出來泡水。米粉泡軟後,倒掉一半的水至大約能蓋過米粉。加入醬油,白胡椒,油蔥酥在水裡泡至少一小時。
Take half of the package of the rich sticks, soak in the water until soft. After the rice sticks become soft, pour off half of the water, add soy sauce, white pepper and dry shallots in the water for at least one hour.

香菇洗淨切片,洋蔥,紅蘿蔔,包心菜,蔥也切段。全部炒熟備用。有肉的要先和香菇炒香再放其他的菜。
Wash mushrooms and cut into slices. Cut the rest of the onion, carrot, cabbage and green onion into slices as well. Stir fry all of them and set aside. If there is meat, stir fry the meat and mushrooms first, and then add the rest of the vegetables.

把泡好的米粉剪段放到大炒鍋裡,並把泡的調味汁倒入,大約快要蓋過米粉。蓋鍋用中小火燜到水快要收乾,約十分鐘。
Put rice sticks in a big pan, cut into sections. Pour in the seasoned water to almost the same high as rice sticks. Cover and cook in medium low heat for 10 miuntes or until the water are almost dry out.

打開鍋蓋,加點麻油並拿筷子翻炒直到所有的水分都被米粉吸收。放入炒好的菜料一起拌炒。
Open the cover, add some sesame oil and stir the rice sticks with chopsticks until all the water is absorbed by the rice sticks. Mix the veggies in.

Note: 這種方法是先讓米粉醃入味,再用燜熟的方式和材料拌炒。比較少油也比較清爽。最後用筷子撈起翻炒的步驟很重要,會讓水收乾米粉才會Q.

Ingredients

  • 2 ~3 chicken beasts 雞胸肉
  • 1 cup of chopped carrot 紅蘿蔔
  • 1 cup of chopped celery 芹菜
  • 1 can of Cream of chicken 奶油雞湯罐頭
  • 1 can of Cream of celery 奶油芹菜罐頭
  • 1 package of Pennette pasta 管通心粉
  • 1 tablespoon butter 奶油
  • Pepper

Directions

將雞胸肉切小塊,紅蘿蔔削皮切小塊,芹菜切小塊。
Cut chicken breast into small pieces, carrots peeled and cut to small pieces, celery cut into small pieces.

煮一鍋水放入通心粉煮熟。撈起瀝乾。
Cook pasta in a pot of  boiling until done. Drain.

在鍋中炒熟雞肉,  紅蘿蔔和芹菜。把通心粉,奶油,Cream of chicken,Cream of celery,一點胡椒粉和炒好的雞肉,  紅蘿蔔和芹菜一起放入烤鍋中拌勻。
Sauté chicken, carrot and celery in pan. Put pasta, butter, cream of chicken, cream of celery, a little black pepper and cooked chicken, carrot and celery in a casserole dish.

放入烤箱以350 F烤十五到二十分鐘即可。
Bake uncovered at 350 F for 15-20 minutes.

Ingredients

  • 4 package frozen udon
  • 2 package spring mix
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce 蠔油
  • 2 tablespoons vinegar
  • 2 tablespoons sugar
  • 2 tablespoons minced garlic
  • 2 tablespoons wasabi 芥末
  • 1/4 cup olive oil
  • 2 tablespoons sesame oil
  • Shrimps (optional)

Directions

將冷凍烏龍麵用開水煮熟,蝦燙熟,瀝乾後放入冰箱。拿一個大碗,把所有的調味料拌勻。用一個大的沙拉碗,拌入醬汁,麵,蝦和沙拉。

Cook udon in a large pot of boiling water, drain and refrigerate. In a jar, combine soy sauce, oyster sauce, vinegar, sugar, minced garlic, wasabi, olive oil and sesame oil, mix well. In a large salad bowl, combine udon, shrimps, spring mix and dressing.

Stir-Fried Italian Sausage with Mushroom Spaghetti 義式炒麵

Ingredients

  • 1  (16 oz) Spaghetti 義大利麵條
  • 1 can (6 oz) tomato paste 番茄膏
  • 2 Italian sausage 義大利香腸
  • 10 mushroom 蘑菇
  • 2 cloves of shallot 紅蔥頭
  • 2 cloves of garlic 蒜
  • Olive oil 橄欖油
  • 1 teaspoon Oregano
  • 1 teaspoon Parsley 荷蘭芹
  • Salt 鹽
  • Pepper 黑胡椒
  • Grated Parmesan cheese 起士粉

Directions

Spaghetti Pasta 義大利麵條:
拿一大鍋煮水至滾。加一小匙鹽到滾水裡,再加入 Spaghetti pasta 煮約 10 分鐘 (Thin Spaghetti 比較快熟)。記得要攪一攪以免黏鍋。等到煮好救撈起,不要太軟。
With a large pot fill with boiling water. Add a teaspoon of salt to the boiling water, then add Spaghetti pasta to cook about 10 minutes (Thin Spaghetti cook faster.)

Sauce :
把義大利香腸裡的肉擠出來,分小塊用中火在大鍋裡炒(放一點橄欖油)。把紅蔥頭和蒜切碎加入鍋中拌炒至香味出來。再把磨菇切片放入拌炒後,加入 tomato paste (不是 tomato sauce)  ,oregano,parsley,  salt,  pepper 和已撈起來的麵,再拌炒一分鐘,讓 tomato paste 均勻的在麵上面。等到汁有點收乾就好了。吃的時候可以撒點 Parmesan cheese 在上面。

Squeeze the meat of an Italian sausage, cook over medium heat in large fry (put a little olive oil.) Stir-fry chopped red onion and garlic until the flavor comes out. Then add sliced mushrooms, tomato paste (not tomato sauce), oregano, parsley, salt, pepper and pasta, and then stir-fry for another minute. Wait until the sauce dry up a little. Sprinkle with Parmesan cheese on top.

Note: 這種乾炒的義大利麵有著熱炒出來的香味,又不會有太濃稠的醬汁感。喜歡多醬汁的可以把 tomato paste 換成 tomato sauce 或 pasta sauce。把煮好的醬汁澆在麵上就好了。
