Ingredients

  • 3 ~ 4 cups of dry seaweed 乾海帶
  • ginger 薑絲
  • 2 tablespoons soy sauce 醬油
  • 1 tablespoon rice vinegar 醋
  • 1 teaspoon sugar 糖
  • 1 tablespoon sesame oil 麻油
  • Sesame seeds 白芝麻
  • Sweet peppers (thin slices) 甜椒絲

Directions

乾海帶泡在水裡直到全部都泡軟,約十分鐘。瀝掉多餘的水。
Dried seaweed soaked in water until soft, about 10 minutes. Drain off excess water.

把薑絲泡在裝有醬油,醋,糖,麻油的大碗裡一下,讓薑絲入味。再把瀝乾水的海帶和甜椒絲拌勻。
In a big bowl, mix in soy sauce, vinegar, sugar, sesame and ginger for a while to get more flavor in ginger. Put in seaweed and sweet pepper, mix well.

最後撒上芝麻就可以吃了!

Note: 我是在韓國店買的這包乾海帶,海帶很嫩,泡一下水就好了!海帶被認為是會提高人體自然免疫系統,提高甲狀腺和肝功能,也有助於排毒。
I got this bag of dry seaweed from a Korean market. The seaweed is very tender. Seaweed is believed to boost the body’s natural immune system and improve thyroid and liver function which also helps with detoxification.

Ingredients

  • 10 eggs 雞蛋 (depends how many people)
  • 1/3 cup mayonnaise 美奶滋
  • 2 teaspoons dijon mustard 狄戎芥末醬
  • 1/2 teaspoon garlic powder 蒜粉
  • Salt and pepper 鹽,胡椒
  • Paprika 匈牙利辣椒粉
  • Parsley 巴西里香芹粉

Directions

在大的鍋裡放入蛋和冷水,水要蓋過蛋。以中火把水燒滾後,關火,加蓋燜至少十五分鐘。再把蛋放入冷水裡冷卻。剝蛋殼後將蛋對半切(縱向切)。
Put the eggs in a large pot and boil the eggs with water at medium heat. Remove from heat and let sit covered for 15 minutes. Put eggs in the cool water. Peel the eggs. Slice each egg in half (lengthwise).

將蛋黃挖出和蛋白分開放。蛋黃裡加入美奶滋,芥末醬,蒜粉,一點鹽和胡椒粉攪拌均勻。用小匙或擠花袋把拌好的蛋黃填回蛋白的凹槽裡。
Separate egg yolks and egg whites. Mash up the yolks and add mayonnaise, mustard, garlic powder, and a little bit salt and pepper in a bowl. Mix well. Use spoon or piping bag to put the egg yolk mixture back into each egg white “cup”.

上面撒上匈牙利辣椒粉和巴西里香芹粉。

Note: 魔鬼蛋通常是作為冷盤。是節慶和派對中常常出現的開胃小菜。上面再加點壽司的那種小魚蛋,看起來更豪華呢!

Deviled eggs are usually served cold. They are served as an appetizer and are a common holiday or party food. Add tobiko (flying fish roe) for more luxury look.

Ingredients

  • 3 Bitter melons 苦瓜
  • 2 cups cooked shrimp 煮熟蝦仁
  • 5~ 6 Shiso leaves (green or purple) 青紫蘇或紅紫蘇
  • Honey mustard dressing 蜂蜜芥末沙拉醬
    (1 cup mayonnaise, 2 tbsp honey, 2 tbsp Dijon mustard, 1/2 cup lemon juice, 1/2 tsp garlic powder)

Directions

苦瓜切一半,除去中間的瓜囊,再切成薄片。切好的苦瓜片泡在冰塊水裡保持清脆約兩小時。
Bitter melon cut in half, remove the middle sac, and then cut into thin pieces. Soaked in ice water to keep crisp for about two hours.

蝦仁燙好也放入冰水中保持清脆。紫蘇切細絲。

先放苦瓜,再放蝦仁,最後上面撒上紫蘇絲擺盤。吃的時候澆上蜂蜜芥末沙拉醬。
Put bitter melon, shrimps, and sprinkle Shiso leaves on top. Pour honey mustard dressing on top when serve.

Note: 紫蘇對葡萄球菌有較強的抑制作用,對大腸杆菌、痢疾杆菌也有抑制作用。紫蘇能擴張皮膚血管,刺激汗腺分泌,故有發汗作用,亦能減少支氣管分泌,緩解支氣營痙攣,因而有止咳袪痰作用,故感冒咳嗽每多用之。此外,紫蘇能促進消化液分泌,增強胃腸蠕動,故其行氣和中的作用可能與此有關。其所含揮發油有較強的防腐作用。(參考維基百科)

Ingredients

  • 2 potatoes 馬鈴薯(土豆)
  • 1 teaspoon salt 鹽
  • 1 teaspoon sugar 糖
  • 1 tablespoon vinegar or lemon juice 醋或檸檬汁
  • 1 tablespoons sesame oil 麻油
  • Green onion 青蔥絲
  • Chili sauce or powder (optional) 麻辣醬或辣粉

Directions

馬鈴薯削皮切絲 (可以用刨絲工具),用水沖去釋出的澱粉。水要蓋過馬鈴薯絲以免氧化變色。
Peel potato skin and cut into thin shreds (use food shredder). Soak and rise potato shreds in the water to get rid of starch. To prevent oxidation and discoloration, the water has to be cover all potato shreds.

馬鈴薯絲在滾水裏燙半分鐘到一分鐘。把燙好的馬鈴薯絲浸在加冰塊的水中保持脆爽口感。
Put potato shreds in boiling water for 30 seconds to 1 minute. Soak in cold water + ice cubes to keep crispy.

將調味料和蔥絲拌入。放置一小時以上使之入味。
Mix in all seasoning and put aside for over 1 hour.

喜愛辣味的也可以拌入麻辣醬或辣椒粉。
For spicy taste, add chili paste or powder.

Note: 馬鈴薯絲要切的很細才好吃,也不要燙太久以免變得太軟而不脆了。
It’s better to make very thin shreds and do not cook too long or the shreds will be too soft.

Ingredients

  • 2 Kohlrabi 大頭菜
  • 2 teaspoons salt 鹽
  • 2 teaspoons vinegar 醋
  • 2 teaspoons sugar 糖
  • 1~2 teaspoons Chili garlic sauce 蒜茸辣椒醬
  • 1 teaspoon sesame oil 麻油
  • Cilantro 香菜

Directions

把大頭菜削皮後,切成小塊。放入兩小匙鹽醃二十分鐘使其出水。
Remove Kohlrabi skin and cut small pieces.  Marinate with 2 teaspoons of salt and wait for 20 minutes until the water comes out.

用冷水沖掉鹽水擠水瀝乾。拌入醋,糖,蒜茸辣椒醬,再放個十分鐘入味。要吃的時候再拌入麻油和香菜就好了!
Rinse away the salty water in fresh cold water.  Mix in vinegar, sugar, chili garlic sauce and set aside for another 10 minutes for more flavorful taste.  Add sesame oil and chopped cilantro when ready to eat.

Note: 大頭菜(意大利蘿蔔)是一種甘藍的品種,幾乎任何地方的都可以生長。大頭菜含豐富的維生素C、鉀、磷,可以生吃,也可以煮熟吃。多吃可防牙齦出血, 加強免疫力。
Kohlrabi (Italian turnip) is a low, stout cultivar of the cabbage that will grow almost anywhere. The kohlrabi is rich in vitamin C, potassium, phosphorus. It can be eaten raw as well as cooked. Eat often can prevent bleeding gums, strengthen the immune system.

Ingredients

  • 1 pound fish paste 魚漿
  • 3/4 cup potato flour 地瓜粉
  • 1/4 cup water 水
  • 1/2 teaspoon salt 鹽
  • 1 teaspoon 糖
  • 1/2 teaspoon white pepper powder 白胡椒粉
  • 1 cup cooking oil 沙拉油(炸甜不辣用的)

Directions

把所有的材料在大碗中全部攪拌均勻好。平底鍋將油燒熱,用手將拌好的魚漿壓成扁平狀放入油鍋炸。
Mix all ingredients well in a big bowl.  Heat oil in a pan, press mixed fish paste into flat shape and deep fry in the pan.

翻面再炸,直到兩面成金黃色即可。切片加甜辣醬更好吃喔!
Deep fry another side until both sides are golden brown. Cut into pieces and dip with sweet chili sauce.

Note: 如果自己能用新鮮的魚來打魚漿是最好的啦。但是用現成魚漿也是可以的,在中國超市買的到。最好買檀香山的魚漿,是沒有加味的!加入白蘿蔔,油豆腐,蒟蒻等以鰹魚湯煮成關東煮(黑輪,甜不辣湯)也是很美味的喔!
It’s better to use the paste made with fresh fish at home.  If not, it’s ok to use the ready-made fish paste, can be found at Chinese supermarket.  You can also add turnip, fried tofu, Konnyaku with bonito soup to make delicious “Tempura Soup” as well.

  • 1~2 cups Coral Seaweed 乾珊瑚草
  • Onion 洋蔥
  • Celery or cucumber 芹菜或黃瓜
  • Carrot or red bell pepper 紅蘿蔔或紅椒
  • Green onion or cilantro 蔥或香菜
  • 1 teaspoon salt 鹽
  • 1 teaspoon soy sauce 醬油
  • 1 teaspoon sugar 糖
  • 1 teaspoon vinegar 醋
  • 1 teaspoon sesame oil 麻油
  • Garlic (minced) 蒜末
  • Ginger (minced) 薑末
  • Fish sauce (optional) 魚露
  • Chili pepper (optional) 辣椒

Directions

乾的珊瑚草沖掉鹽巴,再泡水至少二十四小時。泡好的珊瑚草會呈透明狀。
Rinse the salt off from the dry coral seaweed. Soak the seaweed in clean water at least 24 hours until it turns transparent.

洋蔥切絲泡水(比較不會太辣),芹菜(或小黃瓜)和紅蘿蔔(或紅椒)切絲備用。將泡好的珊瑚草剪成小段,和切好絲的材料與所有的調味品拌在一起(如愛吃辣的可加入辣椒)。放入冰箱至少兩小時使之入味。吃時上面撒上些香菜或蔥絲,芝麻等。
Cut onion to thin slices and soak in water (to get rid off the spiciness.) Slice celery (or cucumber) and carrot (or red pepper) into strips. Cut soaked coral seaweed into sections. Mix well with all ingredients and seasonings and put in the refrigerator for at least two hours. Garnish top with cilantro or green onion, sesame seeds when serve.

1. 珊瑚海草含有豐富的酵素,礦物質,鈣,鐵,多種纖維和果凍形式蛋白質。尤其對於皮膚護理,素食和每日膳食纖維攝入量有良好幫助。它自然生長,不包含任何人工肥料或化學。
Coral seaweed is rich in enzyme nutrients, minerals, calcium, iron ,multitude fibers and jelly form proteins. It is especially good for skin care, vegetarian diet and daily fiber diet intake. It grows naturally and contains no artificial fertilizer or chemical.

2. 泡開後的珊瑚草可冷藏為以後食用。除了涼拌之外,還可以加入蜂蜜,水果醋和水或水果,打成果汁飲用。或和紅棗,蓮子,白木耳,冰糖等煮成冰糖“燕窩”湯。還也可以放入打果汁機中打成泥狀做成面膜!
Soaked seaweed may leave in refrigerator for later consumption. In addition to the salad, you can also add honey, fruit vinegar and water or fruit and put in a blander to make healthy juice. Or cook with red dates, lotus seeds, white fungus, rock sugar, to make “rock sugar bird’s nest soup”. Also, it can be placed in the blender to make a facial mask!

Ingredients

  • 1 bag of soybean sprouts (1lb or 500g) 黃豆芽一包
  • 1 tablespoon minced garlic 蒜泥
  • 1 ~ 2 tablespoons chili powder (Korean) 韓式辣椒粉
  • 1 tablespoon sesame oil 麻油
  • 1/2 teaspoon salt 鹽
  • 1/2 teaspoon sugar 糖
  • Red pepper (julienned) 紅椒,切絲
  • Green onion (julienned) 蔥,切絲
  • 1/2 teaspoon Hondashi 柴魚粉

Directions

黃豆芽洗淨,放入滾水中煮三分鐘。撈起放涼。紅椒去籽和蔥洗淨後切細絲。
Clean soybean sprouts and cook them in boiling water for 3 minutes. Drain and cool down. Julienne both green onion and red pepper.

在大碗裡調好所有調味料。
Mix well all seasonings in a big bowl.

Ingredients

  • 3 ~ 4 large russet potatoes 大馬鈴薯
  • 2 tablespoons olive oil 橄欖油
  • 1 teaspoon paprika 辣椒粉 (西式)
  • 1 teaspoon garlic powder 蒜粉
  • 1 teaspoon onion powder 洋蔥粉
  • 1/4 teaspoon salt 鹽
  • 1/2 teaspoon black pepper powder 黑胡椒粉

Directions

烤箱以華氏425度(攝氏220度)預熱。洗淨馬鈴薯。連皮切成楔塊狀。和橄欖油,辣椒粉,大蒜粉,洋蔥粉和鹽混合均勻。在微波爐高溫熱四分鐘。
Preheat oven to 425 degrees F (220 degrees C). Wash potatoes well. Cut potatoes into wedges (with skin). Mix in olive oil, paprika, garlic powder, onion powder and salt together. Cook in microwave oven on high for 4 minutes.

把馬鈴薯條在烤盤上排一層排好,先烤十分鐘,翻面再烤十二分鐘直到呈金黃色。
Spread the wedges in a single layer on the baking sheet. Bake the potatoes for 10 minutes. Turn, and continue bake until golden brown, about another 10 minutes.

吃的時候在上面撒些黑胡椒。

Note: 也可以用地瓜來做。薯條先微波再烤是可以節省烘烤的時間,也可以直接烤,會比較乾脆一點。
Sweet potatoes can also be used. Using microwave first is to save the baking time. For a crispy taste, bake directly without using microwave.

Ingredients

  • 8 Bean Curds 豆干
  • Gingers 薑
  • 1 teaspoon brown sugar 黑糖
  • 2 tablespoons Shacha Sauce 沙茶醬
  • 2 tablespoons Oyster Sauce 蠔油
  • Basil leaves 羅勒(九層塔)
  • Dried Chili Pepper 乾辣椒
  • 1 tablespoon black sesame oil 黑麻油

Directions

先用沙拉油將薑,辣椒爆香,  乾扁後才加入黑麻油(因為黑麻油不耐高溫, 久了會苦。)
First saute ginger and chili pepper with vegetable oil, after ginger and chili pepper are dried, add in black sesame oil (because black sesame oil will taste bitter if under high temperature too long.)

續爆豆干到兩面焦黃, 加入黑糖拌炒上色, 再加蠔油,沙茶醬稍拌,  加水蓋滿豆干, 大火滾五分鐘(豆干裡面才會一個洞一個洞吸滿湯汁),  再轉小火燒至湯汁稍乾,  起鍋前加入九層塔。
Continue to saute bean curds until both sides are little brown.  Add brown sugar, oyster sauce, Shacha sauce, stir.  Add water until covered all bean curds, cook for 3 minutes in high heat (the holes inside bean curds will suck up the water.) Turn the heat to low until the water is dried up. Add basil leaves just before removing from heat.

Note: 薑和辣椒一定要爆到乾扁才入味。糖的用量依個人喜好而定。
Need to saute the ginger and chili pepper until dry in order to have a better favor .  The amount of sugar used according to personal preferences.

Ingredients

  • 3 Chinese eggplants 長茄子
  • 2 tablespoons soy sauce 醬油
  • 1 teaspoon sugar 糖
  • 1 cup all-purpose flour 麵粉
  • 1 1/3 cups water 水
  • 1 teaspoon white pepper powder 白胡椒粉
  • 1 teaspoon garlic powder 大蒜粉
  • Some basil leaves 羅勒(九層塔)

Directions

茄子切片。在一大盤中拌點醬油和糖,讓兩面都浸約十五分鐘。
Eggplant cut into pieces. Mix in soy sauce and sugar in a big plate,  soak both sides for 15 minutes.

用麵粉,鹽,白胡椒,大蒜粉和水作成麵糊。
Mix flour, salt, white pepper powder, garlic powder and water for a batter.

中火熱鍋加油,茄子裹麵糊放入油鍋煎至兩面都金黃色即可。羅勒(九層塔)也入鍋炸做為裝飾。
Heat oil in a pan, eggplant wrapped in batter into the pan to fry in medium heat until golden brown on both sides. Fry basil leaves as well for decoration.

Note: 茄子中含有維生素P,  可增強細胞間的黏著能力,有防治微血管脆裂出血,促進傷口癒合的作用。但油炸的還是克制點吃吧!
Eggplant contains vitamin P, can enhance cell-cell adhesion ability, prevention of brittle fracture capillary bleeding, promote wound healing.

Ingredients

  • 1 can biscuit dough (8 biscuits) 現成biscuit罐頭麵團
  • 12 ~ 15 big shrimps, chopped 大蝦,切小段
  • 2 tablespoons flour 麵粉
  • 1 egg 蛋
  • 1 teaspoon salt 鹽
  • 1/2 teaspoon white pepper powder 白胡椒粉
  • 1/2 garlic powder 蒜粉
  • 2 teaspoon cooking wine 酒
  • 1 tablespoon minced shallots 紅蔥頭,切細
  • Paprika powder 辣椒粉 (西式)

Directions

現成 biscuit 罐頭麵團放室溫10分鐘。烤箱預熱350F度。將大蝦洗淨去腸泥剁成小段,和麵粉,打好的蛋,鹽,白胡椒粉,蒜粉,酒,切細的紅蔥頭混合成為蝦麵糊。
Put the can of biscuit at room temperature for 10 minutes. Preheat oven to 350F degree.  Clean shrimps and chop into small pieces.  Mix in flour, egg, salt, white pepper powder, garlic powder, wine and minced shallots into shrimp batter.

打開罐頭,將每一個小麵團切一半,整型成小圓麵皮(用手捏捏壓扁)。
Open can, separate each dough and cut in half. Make each half dough into a flat, rounded shape crust.

把麵皮放入做小蛋糕的烤盤(邊邊凸起,中間凹下)。再將蝦麵糊放入每一個麵皮的中間,不要太滿。
Put crust into each cupcake baking pan and make a dish shape. Fill in shrimp batter in the middle, not too full.

放入預熱好的烤箱內烤 12 ~15 分鐘。拿出上面撒點 Paprika powder。
Put into preheated oven for 12 ~ 15 minutes.  When done, sprinkle some Paprika powder on the top.

Note: 現成的 Biscuit 罐頭省了很多時間,在各個超級市場都有賣。蝦子切小段比較有嚼感,喜歡細密的感覺就把蝦剁成泥。
Using ready-made biscuit dough can save you a lot of time. You can get it at any supermarkets.  To make a chewing taste, cut shrimp cut into small pieces; to make a soft taste, chop shrimps into paste.

  • 3 pounds Beef, thin slices 嫩牛肉,切薄片
  • 4 Shallots, minced 紅蔥頭, 切碎
  • 1 cup Cilantro, chopped 香菜
  • A few Mint leaves 薄荷葉
  • A few Basil leaves 九層塔
  • 4 tablespoons Lime juice 萊姆汁
  • 2 tablespoons Fish Sauce 魚露
  • 1 tablespoon Sugar 糖
  • 1 ~ 2 tablespoons Hot Chili Powder 辣椒粉
  • Salt and Pepper 鹽,胡椒

Directions

將牛肉切成薄片(冰凍一下比較好切),用水川燙一下至顏色轉粉紅色,撈起瀝乾。也可以煎牛排半熟再切薄片。
Beef cut into thin slices (better to cut when a little frozen), boil in hot water for a little bit until the color turns pink, drain the water. Or, grill the steak and then cut into thin slices.

紅蔥頭,香菜,薄荷葉,九層塔全部切碎拌好。拌入牛肉,加上萊姆汁,糖,魚露和辣椒粉入味。
Chop all shallots, cilantro, mint leaves, basil leaves. Mix in lime juice, sugar, fish sauce, chili powder with cooked beef/steak.

章魚燒小丸子 Takoyaki (Grilled Octopus Balls)

外酥內嫩美味的章魚燒小丸子,逛夜市必吃的小吃哦!

Ingredients (12 balls)

  • 1 cup all-purpose flour or Takoyaki powder  麵粉或現成章魚燒粉
  • 1 egg 蛋
  • 1/2 cup chopped boiled octopus 煮熟章魚丁
  • 1 1/3 water 水
  • 1/2 teaspoon salt (optional, don’t put salt if use ready-made powder) 鹽
  • 2 tablespoons cooking oil 油
  • 1 cup chopped cabbage 高麗菜粒
  • 2 green onion, chopped 青蔥切碎

For Topping:

  • Takoyaki sauce (or Okonomiyaki sauce) 章魚燒醬或大阪燒醬
  • Mayonnaise 美乃滋
  • Katsuobushi (dried bonito flakes) 柴魚片
  • Aonori (Seaweed flakes) 海苔粉或絲

Equipment:

  • Takoyaki Grill Pan 章魚燒烤盤

Directions

將麵粉或現成章魚燒粉,蛋,水,鹽,油混合一起均勻 (若用章魚燒粉就不要放鹽,本來就有鹹味了),再加入高麗菜粒(混在一起比較好烤。)
Combine flour or Takoyaki powder, egg, water, salt (do not put salt if you use ready-made Takoyaki powder, it has salt already), cooking oil together. Mix in chopped cabbage (for easy grilling.)

將章魚丁和青蔥混合。章魚燒烤盤以中火燒到很熱,用刷子抹油。倒入和好的麵粉汁後用小火烤。
Mix octopus and green onion together in a small bowl. Preheat the Takoyaki pan in medium heat and grease the molds. Pour batter into the molds to the full and grill in low heat.

再把章魚丁加蔥平均撒在圓孔中,用竹籤把餡料壓入麵糊中。
Put octopus and green onion into the batter. Press the filling into the batter.

等每個小球的麵糊稍凝結定型後,用兩根竹籤劃邊使丸子鬆動,讓章魚燒小丸子可轉動站起來,再繼續倒入麵粉汁,再轉動,  再刷油。也把留在平盤上的麵糊撥到圓孔裡直到定型結合成圓球。
Grill Takoyaki balls until sightly shaped , flipping with two picks and fill in more batter. Brush more oil on balls. Flipping again and push the overflowed batter into the molds until smooth ball shape.

烤至小丸子呈金黃色時就可拿起來。在小丸子上刷上章魚燒醬,再加上美乃滋,灑上柴魚片、海苔粉或絲就成了!
When browned, remove Takoyaki from the grill pan. Brush Takoyaki sauce, mayonnaise on top and sprinkle bonito flakes and seaweed flakes over.

Note: 章魚燒小丸子是日本受歡迎的小點心。自己在家做也很方便,初次做也不會失敗的。現成的章魚燒粉已經調好味,適合初學者用。材料都可以在日本超市買得到。如用麵粉則要加紅薑粉,柴魚高湯等入味。當然,你也可以用別的材料當內餡,像是蝦啦,玉米啦,就有不同的口味哦!
Takoyaki is a popular Japanese ball-shaped grilled octopus dumpling. Very easy to make at home even the first time. The ready-made Takoyaki powder has already mixed favors that good for first timer. You can get those ingredients at the Japanese market. Of course, you can put shrimps or corns as filling to have a different taste!

Ingredients

  • 1 can of biscuit dough (8 giant biscuits) 比司吉麵團罐頭
  • 2 cup of chicken, cubed 雞肉
  • 2 tablespoons Caesar Salad dressing 凱撒沙拉醬
  • 1/2 cup Parmesan cheese 帕馬森乾酪粉或絲
  • 1 cup romaine lettuce, shredded  蘿蔓沙拉

Directions

打開比司吉罐頭。分開每一個放入烤小蛋糕的烤盤。
Open the can of biscuit dough, put each one in the baking cupcake pan.

雞肉蒸熟切小塊。拌入凱撒沙拉醬。
Chicken steamed and cut into small pieces.  Put small amount chicken mix in the middle of the biscuit dough.

Bake in 400F for 10 ~ 12 minutes. Cut romaine lettuce into small strips.

Ingredients

  • 4 lotus roots bulbs 蓮藕
  • 1 1/2 tablespoons white vinegar
  • 1 teaspoon brown sugar
  • 2 teaspoons sesame oil
  • 1/2 teaspoon salt
  • 1 teaspoon water
  • Fresh ginger
  • 1 tablespoon cilantro, chopped
  • 1 tablespoon Goji berries

Directions

將蓮藕洗淨,把兩頭切掉不用。削皮,切成一片一片。立刻浸到加點醋的水中以防氧化變色。瀝乾水分待用。枸杞子泡水。
Wash lotus roots. Trim and discard both ends of the bulb. Peel the skin and cut into slices; immediately plunge slices into acidulated water. Drain. Soak Goji berries in a bowl of water.

把蓮藕放到開水裡快速川燙三十秒到一分鐘,撈起待涼。拿一小碗,混合薑,糖,醋,鹽,水和麻油做為調汁。
Put lotus roots into a pot with boiling water for 30 seconds to one minute. Drain, set aside for cooling down. In a small bowl, combine the ginger, sugar, salt, water and sesame oil as the dressing.

調好的調味汁拌入切好的蓮藕。加入香菜和枸杞子。放入冰箱冷藏。
Pour dressing over lotus roots. Mix in chopped cilantro and Giji berries (drained). Refrigerate until chilled. Serve chilled.

Note: 做涼拌的蓮藕要選嫩一點的,通常是前面兩截。For salad, choose the young parts of the lotus root, usually the first two bulbs.

Ingredients

  • 6 skinless chicken thighs, cut into thin strips (about 3 strips per thigh)
  • 18 wooden skewers 竹籤
  • 3 tablespoon Satay Sauce (from Lee Kum Kee) 沙爹醬
  • 1 tablespoon water
  • 1 teaspoon soy sauce

Peanut Satay Sauce 花生沙爹醬汁

  • 1 cup peanut butter
  • 1/3 cup water
  • 2 cloves garlic, minced
  • 1/2 teaspoon soy sauce
  • 2 teaspoon sesame oil
  • 2 tablespoon brown sugar
  • 2 tablespoon fish sauce
  • 1/2 teaspoon lime juice
  • 1/3 cup coconut milk
  • 1 teaspoon chili sauce (optional)

Directions

將沙爹醬和水,醬油混合好為醃醬汁。雞肉洗淨,切成長條。
Mix well LKK Satay Sauce, water and soy sauce. Wash chicken and cut into strips.

烤肉架燒熱,約350F度。將雞肉串好。
Set the grill for about 350F. Thread chicken onto the skewers.

串好的雞肉排放架上,燒烤至一面金黃(需要時加上醬汁防雞肉變乾),翻面繼續燒烤至另一面金黃色。
Grill the satay on the BBQ grill, grill until golden color (basting the a little leftover marinade from the bottom of the bowl to prevent drying.) Turn over and grill until done.

把所有的材料攪拌均勻。愛吃辣的可以加辣椒醬。

  • 2 Frozen hundred-layered bean curd 百頁豆腐
  • some celery, cut into thin strips 芹菜絲
  • cilantro 香菜
  • Szechuan pepper powder 花椒粉
  • Hot chili sauce 辣椒醬
  • Minced garlic 蒜末
  • Salt
  • Sesame seed oil

Directions

將冷凍的百頁豆腐解凍後切長條。過水川燙一下放到盤子上涼。芹菜切絲,香菜切碎。等百頁豆腐涼了以後,拌入芹菜,香菜,花椒粉,蒜末,鹽,辣椒醬和麻油。口味依個人喜好。

Thaw the hundred-layered bean curd and cut into 2 inches long strips. Dip into a hot water for a short time and put into a plate to cool down.  Mix in shredded celery, chopped cilantro, Szechuan pepper powder, minced garlic, salt, chili sauce and sesame oil (up to  to personal taste preferences.)

  • 1 package Seaweed Jelly (From Korean Market)
  • 10 pieces crabmeat strips (either real or imitation)
  • 1 cucumber, cut into long thin strips
  • 1 teaspoon vinegar
  • 1 teaspoon sugar
  • mayonnaise
  • Salt

Directions

把 seaweed jelly 泡冷水後拿起來瀝乾水分。加醋,糖,鹽,小黃瓜,蟹肉和美奶滋扮好即可。

Drain water after soak seaweed jelly in cold water. Add vinegar, sugar, salt, cucumber, crabmeat and mayonnaise for your taste.

Ingredients

  • 2 package frozen Edamame soybeans
  • 2 teaspoon salt
  • 2 star anise 八角
  • 1 teaspoon minced garlic (or garlic powder)
  • 2 teaspoon sesame seed oil
  • black pepper powder

Directions

準備一鍋開水,將冷凍毛豆,八角,鹽放入水中煮八到十分鐘,毛豆開始變軟即可。撈起待涼(或放入冰箱)。吃時拌入蒜末,麻油,黑胡椒粉少許鹽(視個人喜好)。

Prepare a bit pot with boiling water, simply put the frozen Edamame, salt and star anise in the pot. Cook for  5~8 minutes until begins to soften. Drain the water and put in a plate to cool down (or put into the refrigerator). Mix with minced garlic, sesame seed oil and black pepper, salt (if needed) for taste when ready to eat.
