Ingredients

  • 5~6 chicken drumsticks or half chicken 雞腿或半隻雞
  • 2 Asian pears 雪梨
  • 8~10 red dates 紅棗
  • Few pieces of ginger 薑
  • Goji berries 枸杞

Directions

雞腿 (切開或不切隨意)川燙後,和紅棗,薑加水一起放在大鍋煮開,再關到小火繼續煮一個小時。雪梨切塊去籽 (不用削皮),和枸杞一起加湯裡再以小火燉約一小時,最後再加鹽調味。簡單吧!
Blanch chicken (either cut or uncut) in boiling water first. In a big pot, add chicken, red dates, ginger, water, cook for 1 hour (boiling first, then simmer). Cut pears into pieces and core to remove seeds (keep the skin). Put pear and goji berries into soup, simmer for another hour. Add salt to taste. Easy!

Note: 這道湯可以養顏潤肺,適合乾燥的秋天,是個很棒的養生湯。也可以用豬骨,瘦肉來替代雞。
This soup has many benefits for our body, especially helps nourish the lungs. You may also use pork bone or pork meat instead of chicken for different flavors.

Ingredients

  • 1/2 ~ 1 lb ground pork 豬絞肉
  • 1/2 ~ 1 lb fish paste 魚漿
  • 2 tablespoon corn starch 太白粉
  • 1 teaspoon garlic powder 蒜粉
  • 1 medium white radish (daikon) 白蘿蔔
  • 2 carrots 紅蘿蔔
  • 2 cups shredded Burdock roots (Gobo) 牛蒡絲
  • 2 cups shredded Shitake mushrooms 香菇絲
  • 2 cups black fungus 黑木耳
  • 1 tablespoon soy sauce 醬油
  • 1 tablespoon black vinegar 烏醋
  • 1 tablespoon fried shallots 油蔥酥
  • Salt 鹽
  • Sugar 糖
  • White pepper 白胡椒
  • Minced garlic 蒜末
  • Cilantro 香菜

Directions

在一大碗裡,混合豬絞肉,魚漿(一比一的比例),蒜粉,一大匙太白粉和一點鹽(魚漿已經有點鹹味了)。要完全混合均勻。
In a large bowl, mix ground pork, fish paste (1 to 1 ratio) , garlic powder, corn starch, and a little bit salt (the fish paste is already salty). Until completely mixed.

把扮好的肉漿放在一個塑膠袋裡,角落剪一個開口。準備一鍋開水,慢慢將肉漿從開口中擠出適當的大小(最好是一口大小),用手指或筷子在塑膠袋開口處分開每個小肉塊,放入鍋中。等到肉塊開始浮起來的時候,就可以先撈起備用。煮太久,肉塊會沒有味道。
Place meat paste into a plastic bag, and cut a opening at the corner.  Boil water in a large pot. Slowly squeeze paste out to the pot from the opening of the bag (bite size),  and separate each meat nugget with fingers or chopsticks.  Cook in medium heat until nuggets begin to float. Scoop up all nuggets to a plate. Do not cook too long or nuggets will reduce their taste.

紅,白蘿蔔切長段,黑木耳洗淨,香菇泡軟切絲,牛蒡削皮切絲(或用現成冷凍牛蒡絲)。把所有切好的材料放入剛剛煮肉塊的湯鍋裡,煮至湯滾後轉中火繼續煮到紅,白蘿蔔軟了。
Cut both carrot and white radish into finger-length pieces.  Wash black fungus clean.  Cut Shiitake mushrooms into thin slices, and shred Burdock roots thinly (or use frozen shredded Burdock roots.)  Put all ingredients into the previous soup.  Bring to a boil, reduce to medium heat an cook until carrots and radishes are soft.

加入煮好的肉塊,醬油,烏醋,油蔥酥,白胡椒,鹽,少許糖和太白粉水(一大匙太白粉加水)繼續煮到湯變成濃稠狀就好了。吃的時候上面撒些蒜末,香菜.
Mix in cooked pork nuggets, soy sauce, black vinegar, fried shallots, white pepper powder, salt , a little bit sugar, and corn starch water (1 tablespoon corn starch mix with water).  Stir and cook until soup becomes thicker.  Sprinkle some minced garlic and cilantro on the top when eat.

Note:
1. 可任意加上蛋花,白菜等。也可做成肉羹麵或肉羹冬粉。Add an egg or napa cabbage as you wish.   You can also add noodle to make pork nuggets noddle as well.
2. 如果肉塊做太多可以留著冷凍起來下次再吃。You can freeze the extra port nuggets for another time use.
3. 紅,白蘿蔔,黑木耳,牛蒡,香菇都是養生的食物,多吃有益健康。Carrot, radish, black fungus, Burdock root, Shiitake mushroom are all healthy food. It benefits our health by eating often.
4. 如果新鮮牛蒡不好處理,可以買現成的冷凍牛蒡絲,美心,永和等中國超市都可買到。You can buy the frozen shredded burdock (Gobo) from any Chinese supermarket if the fresh burdock roots are hard to prepare.
5. 用現成魚漿可以在中國超市買的到。最好買檀香山的魚漿,是沒有加味的。It’s ok to use the ready-made fish paste, can be found at Chinese supermarket.

Ingredients

  • 2 pieces big silver carps 鰱魚段
  • 1 onion 洋蔥
  • 3 tomatoes 番茄
  • 2 teaspoons corn starch 太白粉
  • Few pieces ginger 薑絲
  • 1 tablespoon Sake or rice wine 清酒或米酒
  • 1 tablespoon Mirin 味醂
  • 2 teaspoons salt (half for marinate, half for soup) 鹽
  • green onion 青蔥
  • white pepper powder 白胡椒粉

Directions

鰱魚切大塊,在大碗中拌入薑絲,清酒,鹽,太白粉醃三十分鐘個鐘頭。番茄切塊,洋蔥切絲。
Cut Silver carp into big cubes, mix ginger, Sake, salt, cornstarch in a big bowl and marinate for 30 minutes. Cut tomato into big pieces, and onions into thin slices.

鍋加油燒熱,先拌炒洋蔥到半透明,再放入蕃茄拌炒。加水大火煮開後,  放魚塊繼續以中火煮十五分鐘。
Saute onion in a hot pot first, then tomato.  Add water cook in high heat until boiling,  add fish and continue cook in medium heat for 15 minutes.

加鹽,味醂,白胡椒粉調味。最後再上面加上青蔥絲就好了!
Add salt, Mirin, white pepper powder for seasoning.  Sprinkle some green onion over the top of the soup when serving.

Note: 魚塊要先用薑,酒,太白粉醃過可以去腥味,魚肉也會比較入味。鰱魚的營養豐富,肉質鮮嫩,對皮膚乾燥者有很大的幫助。
Marinate fish with ginger, rice wine, cornstarch to get rid off the fishy smell, and it will be more tasty.  Silver carp is rich in many nutrients,  and it’s a great help for dry skin as well.

Ingredients

  • 6 chicken drumsticks 雞腿
  • 1/2 bottle rice wine 米酒 (喜歡重口味的可以放2瓶酒不放水)
  • Ginger 薑 (越多越好)
  • 2 tablespoons sesame oil 麻油
  • Goji 枸杞 (optional)

Directions

這是參考阿基師的做法,比較清淡的口味。將雞腿剁成塊,用熱水川燙,去血水。薑切片或拍碎。
Chop the chicken legs into pieces, put in a pot with boiling water to get rid of scum. Slice or smash gingers.

麻油雞湯 Sesame Oil Chicken Soup

先用沙拉油爆薑,要把薑炒出味道來,變乾乾的才行。再把雞肉下鍋拌炒。(阿基師說:因為麻油不耐高溫,會越炒越苦,所以要先用沙拉油爆香薑片。)
Saute ginger with cooking oil until the ginger become dry. Stir fry with chicken together. (Sesame oil will taste bitter if under high temperature too long.)

加入水和米酒繼續燉煮直到酒香味都出來,肉也軟了。起鍋前加麻油和枸杞再煮一下就好了。(喜歡重口味的可以只放酒不放水。)
Add water and rice wine and continue to simmer until the rice wine flavor are out and the meat is soft. Add sesame oil and goji and continue to cook a little bit before serve. (For heavier taste, put only 2 bottles of rice wine without any water.)

Note:
1. 這是參考阿基師的做法,比較清淡的口味。根據阿基師,煮麻油雞不可加鹽,不然雞肉會柴(不嫩)。而先用沙拉油炒薑煮出來的湯就不會苦苦的。喜歡重口味的可以都放全酒不放水。
Do not put salt in the soup or the meat will not be tender. Use cooking oil to saute ginger instead of sesame oil to prevent the soup becoming bitter. For heavier taste, put only rice wine (about 2 bottles) without any water.

2. 好友璐璐提供的另種做法:先用乾鍋煎薑片,邊緣焦焦後下黑麻油和雞肉炒至變色。加啤酒去煮。煮好後加雞粉或柴魚粉調味。再依個人喜好加米酒一起煮。
Another recipe from my friend: Saute gingers in a pot (dry, without oil). Add sesame oil and chicken when gingers turn slightly burn, stir-fry until chicken half cooked. Pour a can of beer and cook for a while, add a little chicken powder to enhance favor. Add rice wine (according to personal preference) and cook until done.

Ingredients

  • 2 Loofahs 絲瓜
  • 10 meatballs 貢丸
  • 3 bean thread noodles 粉絲
  • A few dry shrimps 蝦米
  • 4 cups 雞湯(高湯)
  • Ginger 薑
  • Green onion 蔥
  • Salt 鹽
  • White pepper powder 白胡椒粉

Directions

貢丸切半,絲瓜削皮去籽切成塊狀。薑切絲,入熱油鍋和蝦米一起爆香。放入貢丸,絲瓜一起拌炒一下後加入雞湯(高湯)和切段的蔥,適量的鹽和胡椒一起煮。煮滾後加入粉絲煮至軟即可。
Meatballs cut in half, peeled and seeded loofah cut into pieces. Saute shredded ginger and dry shrimps together. Add meatballs and loofah and stir-fry a little, then add chicken broth and green onion, salt and white pepper powder and cook until boiling. Put in bean thread noddles in the pot until soft.

Ingredients

  • 4 slices bacon
  • 2 cup finely chopped onion
  • 6 medium potatoes, peeled, diced
  • 3 tablespoons all-purpose flour
  • 3 cans (6 oz. each) minced clams with liquid 蛤蜊
  • 1 cup bottled clam juice
  • 2 cup water
  • 1 cup half-and -half
  • 2 teaspoon Parsley 義大利香菜
  • Salt and pepper to taste

Directions

在熱鍋將培根煎至脆,用 paper towel 吸去油分,切成小塊待用。

在一湯鍋中,用油炒香洋蔥,再放入馬鈴薯塊炒一下。放入麵粉,clam juice,和蛤蜊罐頭裡的汁煮至沸騰。轉至小火慢慢煮到馬鈴薯軟,約十來分鐘 (要攪拌)。

加入 half-and -half 和鹽,胡椒。再加入罐頭裡的蛤蜊小火煮幾分鐘, 不要太久。吃的時候撒上培根和 parsley。

Saute bacon until brown and crisp. Drain on paper towels. Dice or crumble.  In a pot, saute chopped onion and potatoes for a couple minutes. Sprinkle with flour.  Add clam juice from can and from bottle. Bring to a boil. Simmer, stirring from time to time, until potatoes are soft, about 10 minutes.  Add half-and-half and season to taste with salt and pepper.  Add minced clams from cans. Heat until simmering.  Sprinkle with parsley and bacon.

Note: 用新鮮的蛤蜊味道會更好。沒有新鮮的,用罐頭的也可以。蛤蜊要最後再加入煮,不然會太老變硬。要不斷的攪拌以防麵粉黏在鍋底。

Ingredients

  • 2 White woodears 白木耳
  • 20 Red dates 紅棗
  • Some Dry Lily 百合
  • Goji Berries 枸杞
  • 1 cup rock candy 冰糖

Directions

將乾的白木耳泡水,剪掉根部硬的地方,剪成小片片備用。
Have dried white woodear soak in water; cut off the roots parts and cut into small pieces.

再將紅棗,百合,白木耳放進水裡煮滾。等煮爛了再加糖調味。最後再加枸杞燜個十分鐘就好了。
Add dates, lily, white woodears into the water and bring to boil. Add sugar when everything is soft. Finally, add Goji berries and simmer for ten minutes.

Note: 選擇白木耳不要選太白的,怕是有漂白過的。枸杞比較會煮爛, 最後加就好了。
Try not to choose the white woodears that are too white. It may be bleached. Add Goji berries at the last since they soften easily.

Ingredients

  • 1 package Soybean sprout 黃豆芽
  • 1 box Tofu 豆腐
  • 1/2 cup Miso 味噌
  • 1 tablespoon sesame oil 麻油
  • 1 tablespoon minced ginger 薑末
  • Salt 鹽
  • Green onion 青蔥

Directions

黃豆芽洗淨瀝乾水分,豆腐切小方丁。熱鍋倒入麻油燒熱,先放入薑末炒出香味,再加入黃豆芽拌炒均勻。將水,鹽和豆腐加入鍋中大火煮開後改中火續熬煮十分鐘。熄火後加入調水後的味噌攪拌均勻,盛出撒上青蔥即可。

Wash and drain soybean sprouts, cut tofu into small squares. Heat sesame oil in a pot, add ginger and stir fry until fragrance comes out, then add soybean sprouts and stir fry evenly. Add water, salt, and tofu in the pot, change to medium heat after boiling for ten minutes.

Note: 黃豆芽是一種營養豐富,味道鮮美的蔬菜,是好的蛋白質和維生素的來源。味噌具有去除活性氧(自由基)的效果,又幫助消化。在一起煮出來的湯不用多放調味料就很鮮美了。
Soybean sprout is a nutritious, delicious vegetables, it’s a good sources of protein and vitamins. Miso can removal of free radicals, and help with digestion. It is very delicious to cook together, no extra seasoning needed.
