Ingredients

  • 2 potatoes 馬鈴薯(土豆)
  • 1 teaspoon salt 鹽
  • 1 teaspoon sugar 糖
  • 1 tablespoon vinegar or lemon juice 醋或檸檬汁
  • 1 tablespoons sesame oil 麻油
  • Green onion 青蔥絲
  • Chili sauce or powder (optional) 麻辣醬或辣粉

Directions

馬鈴薯削皮切絲 (可以用刨絲工具),用水沖去釋出的澱粉。水要蓋過馬鈴薯絲以免氧化變色。
Peel potato skin and cut into thin shreds (use food shredder). Soak and rise potato shreds in the water to get rid of starch. To prevent oxidation and discoloration, the water has to be cover all potato shreds.

馬鈴薯絲在滾水裏燙半分鐘到一分鐘。把燙好的馬鈴薯絲浸在加冰塊的水中保持脆爽口感。
Put potato shreds in boiling water for 30 seconds to 1 minute. Soak in cold water + ice cubes to keep crispy.

將調味料和蔥絲拌入。放置一小時以上使之入味。
Mix in all seasoning and put aside for over 1 hour.

喜愛辣味的也可以拌入麻辣醬或辣椒粉。
For spicy taste, add chili paste or powder.

Note: 馬鈴薯絲要切的很細才好吃,也不要燙太久以免變得太軟而不脆了。
It’s better to make very thin shreds and do not cook too long or the shreds will be too soft.
