Food Weights and Measures 食物重量與測量

dash, a few grains = less than 1/8 teaspoon

1 tablespoon 大匙= 3 teaspoons 茶匙

1 teaspoon = 5 grams (cc)

1 cup 杯 = 16 tablespoons = 128 grams (all purpose flour) = 136 grams (bread flour) = 200 grams (white sugar)

1/2 cup = 8 tablespoons

1/3 cup = 5 1/3 tablespoons

1 cup (liquid) = 8 ounces = 236 grams (cc)

1 pint = 2 cups

1 quart = 2 pints = 4 cups

1 gallon = 4 quarts

1 pound = 16 ounces

1 stick of butter = 1/2 cup = 1/4 pound

1 pound granulated sugar = 2 1/4 cups sugar

 

Abbreviations Used in Recipes 食譜中用的簡稱

hat

°C. = Degrees Centigrade

°F = degrees Fahrenheit

min. = minute

hr. = hour

qt. = quart

lb., # – pound

c. – cup

tsp., t. = teaspoon

tbs., tb., tbsp., T. = tablespoon

pk. = peck

oz. = ounce

pt. = pint

mod. = moderate

doz. = dozen

 

Serving Sizes (A Rule of thumb for Serving Sizes) 份量

1 Thumb = 1 ounce of cheese

1 Thumb Tip = 1 teaspoon of mayonnaise, peanut butter, or sugar, etc.

3 Thumb Tips = 1 tablespoon

1 Fist = 1 cup of spaghetti, rice, or vegetables, etc.

1 or 2 Handfuls = 1 ounce of snack food (1 handful of small foods like nuts or 2 handfuls of larger foods like chips and pretzels)

1 Palm (minus the fingers) = 3 ounces of meat, fish, or poultry
