Ingredients

  • 1 package or 12 pieces fried tofu 油豆腐泡
  • 1 pound ground pork 豬絞肉
  • 2 1/2 tablespoons soy sauce 醬油
  • 1/2 tablespoon cornstarch 太白粉
  • 1 tablespoon shaoxing wine 紹興酒
  • 1 teaspoon minced ginger 薑末
  • white pepper powder 白胡椒粉
  • 1 tablespoon sesame oil 麻油
  • 2 cloves garlic 蒜
  • Green onion 青蔥
  • 1/4 Napa cabbage 大白菜
  • 1 teaspoon sugar 糖
  • salt 鹽

Directions

先將油豆腐泡洗淨,開水川燙一下(去油味)。將豬絞肉和一大匙醬油,太白粉,薑末,米酒,白胡椒粉,些許蔥,麻油和一大匙水均勻攪拌(同一方向)。
Wash fried tofu and rinse in boiling water for a few minutes to get rid of oily taste.  Mix together ground pork, soy sauce, cornstarch, minced ginger, wine, white pepper powder, some green onion, sesame oil and one tablespoon of water.  Mix in the same direction until thoroughly combined.

在油豆腐泡的一邊剪一個洞,將拌好的絞肉塞進油豆腐泡裡。在另一個盤子上鋪上燙好的大白菜備用。
Cut a little hole on one side of each fried tofu and stuff with pork mixture.  In another dish, line with cooked napa cabbage.

以中火把每一個油豆腐泡鑲肉的一邊在油鍋底煎約兩分鐘。再加入蔥,一大匙半醬油,糖,鹽和水大約蓋到一半的高度,加蓋以中小火煮五至七分鐘。將煮好的豆腐泡放至擺好盤的大白菜上。剩下的湯汁用太白粉加水勾芡。
Place stuffed tofu meat side down to brown the meat in medium heat, about 2 minutes.  Add green onion, 1 1/2 tablespoon soy sauce, sugar and water to cover about half high of the fried tofu. Cover and cook in medium low heat until the sauce dry out a little, about 5 ~ 7 minutes. Place cooked fried tofu on top of napa cabbage.  Thicken the sauce with cornstarch water.

將勾好芡的湯汁澆在油豆腐泡和白菜上即可。

Note: 用青江菜擺盤也很漂亮喔。也可以在絞肉中放入剁碎荸薺,會有脆脆的口感!
You can substitute Bok choy with Napa cabbage for a different look.  Adding minced water chestnuts in the ground pork mix will have more crunchy taste!

Ingredients

  • 5~6 chicken drumsticks 雞腿
    or
  • 4 chicken thighs (without bone) 去骨雞大腿肉
  • 1 tablespoon Goji Berries 枸杞
  • 2 teaspoons salt 鹽
  • Few pieces ginger 薑片
  • 2 cups water 水
  • 1 cup Shaoxing wine 紹興酒

Directions

先將水和枸杞,薑煮開成薑水待涼。棒棒雞腿抹鹽隔水蒸熟,約二十分鐘。
Boil water with ginger and goji berries. Set aside for later use. Rub some salt on the drumsticks, and steam in high heat for 20 minutes.

蒸好的雞腿放入容器中,倒入涼的枸杞薑水,鹽和紹興酒,要蓋過雞腿。蓋上蓋子放入冰箱冷藏一天入味。
Put steamed drumsticks in a container, pour in cooked goji ginger water, salt, shaoxing wine until cover all chicken. Cover and refrigerate for a day.

如果帶骨的雞腿切不好,另一種簡單的方法可以用去骨的雞大腿肉。抹鹽再捲起用錫箔紙包住,大火蒸十五分鐘。再把蒸好的無骨雞腿放入容器中,倒入涼的枸杞薑水,鹽和紹興酒,要蓋過雞腿。蓋上蓋子放入冰箱冷藏一天入味。
If it is hard to cut the drumsticks with bone, anther simple way to use is boneless chicken thighs. Rub some salt onto chicken thigh, wrap with aluminum foil. Steam in high heat for 15 minutes. Unwrap the chicken when done, and put steamed boneless chicken thighs in a container, pour in cooked goji ginger water, salt, shaoxing wine until cover all chicken. Cover and refrigerate for a day.

將入味後的雞腿拿出切塊,以枸杞裝飾,再淋一些酒汁在上面。
Cut chicken into pieces. Decorate with goji berries and pour some wine juice on top when serving.

紹興醉雞 Drunken Chicken

Note: 雞腿或雞大腿不要蒸太久,以免肉太老。紹興醉雞也可搭配中葯材,像是當歸,來煮出美味又養身的葯膳料理。
Do not over-steam the chicken or it will be too tough to eat. You can also put some Danggui in the wine juice to have more herb flavor.

Ingredients

  • 2 pieces big silver carps 鰱魚段
  • 1 onion 洋蔥
  • 3 tomatoes 番茄
  • 2 teaspoons corn starch 太白粉
  • Few pieces ginger 薑絲
  • 1 tablespoon Sake or rice wine 清酒或米酒
  • 1 tablespoon Mirin 味醂
  • 2 teaspoons salt (half for marinate, half for soup) 鹽
  • green onion 青蔥
  • white pepper powder 白胡椒粉

Directions

鰱魚切大塊,在大碗中拌入薑絲,清酒,鹽,太白粉醃三十分鐘個鐘頭。番茄切塊,洋蔥切絲。
Cut Silver carp into big cubes, mix ginger, Sake, salt, cornstarch in a big bowl and marinate for 30 minutes. Cut tomato into big pieces, and onions into thin slices.

鍋加油燒熱,先拌炒洋蔥到半透明,再放入蕃茄拌炒。加水大火煮開後,  放魚塊繼續以中火煮十五分鐘。
Saute onion in a hot pot first, then tomato.  Add water cook in high heat until boiling,  add fish and continue cook in medium heat for 15 minutes.

加鹽,味醂,白胡椒粉調味。最後再上面加上青蔥絲就好了!
Add salt, Mirin, white pepper powder for seasoning.  Sprinkle some green onion over the top of the soup when serving.

Note: 魚塊要先用薑,酒,太白粉醃過可以去腥味,魚肉也會比較入味。鰱魚的營養豐富,肉質鮮嫩,對皮膚乾燥者有很大的幫助。
Marinate fish with ginger, rice wine, cornstarch to get rid off the fishy smell, and it will be more tasty.  Silver carp is rich in many nutrients,  and it’s a great help for dry skin as well.

Ingredients(4 ~ 5 persons)

  • 2 Beef shanks 牛腱
  • 3 ~ 4 Onions 洋蔥
  • 6 ~ 8 Roma tomatoes 番茄
  • 5 ~ 6 Star anise 八角
  • Few pieces Ginger 薑
  • 2 Lemongrass 香茅
  • 5 ~ 6 Lemon leaves (or small tangerine leaves)
    檸檬葉或小橘子葉
  • A few curry leaves (optional) 可因氏月橘葉/調料九里香
  • 4 bags Indonesian instant seasoning mix (Rendang) 印尼咖哩醬
  • 2~3 tablespoons curry powder 印度咖哩粉

Directions

牛腱肉洗淨,切大塊約兩吋厚(這樣肉不會煮散掉。)兩個洋蔥切小塊。蕃茄切大塊也約兩寸厚。檸檬葉,小橘子葉和可因氏月橘葉泡水洗淨。
Wash beef shanks and cut into large chunks, about two inches thick each. Cut two onions into small pieces. Cut tomatoes into big pieces about one inch thick.  Wash and soak all leaves in water for later use.

薑和八角用油炒香,再加洋蔥拌炒。牛肉先用塩抓一抓,加入鍋中用大火拌炒至變色。再加水到剛剛好蓋過肉。大火煮開後,轉中小火繼續煮到牛肉軟了,約一個半小時(中間不要隨意打開蓋子)。如用壓力鍋則約二十分鐘即可。
Saute ginger and star anise in a big wok first, then add onion. Rub salt into beef, add beef into the wok and stir-fry until lightly done. Add water until it almost covers the beef. Boil and then cook in medium low heat until soft, about 1.5 hours (do not open the lid while cook). About 20 minutes if using a pressure cooker.

把香茅外皮剝掉,切掉上端葉子部份和根底部。先拍打後再切成小段放入Food Processor 攪拌成小細絲。
Peel off the lemongrass skin and cut off the top of the leaf parts and bottom roots. Flatten first and cut into small pieces.  Put into a food processor.

在另一容器把印尼咖哩醬和印度咖哩粉扮好均勻(二比一比例)備用。
Mix well 4 bags of Indonesian instant seasoning mix (Rendang) and curry powder (2:1 ratio) in another container.

把已經煮軟的牛肉撈出。丟掉薑和八角等渣渣,湯留下備用。
Scoop up the beef.  Discard ginger, star anise and other scum. Save the soup for later use.

另用一鍋先炒香茅,再加入檸檬葉,可因氏月橘葉(optional) 和一~兩個切稍大塊的洋蔥拌炒一下。放入蕃茄拌炒後再加調好的咖哩醬一起炒。
Saute lemongrass in another wok.  Add lemon leaves, curry leaves (optional) and chopped onion (one or two onion) together, stir fry.  Add tomatoes and curry paste together.

加入牛肉和之前留下的湯汁約九分滿。大火煮開後再蓋鍋用中火煮個二十至三十分就好了。
Add beef and previous saved soup (from the meat) until it almost covers the meat. Boil and then cover in medium heat for another 20 ~ 30 minutes.

Ingredients

  • 3 cups bread flour, more for dusting 高筋麵粉
  • 1/4 teaspoon instant yeast 乾酵母
  • 1 1/4 teaspoons salt 鹽
  • 1 1/2 cups water 水
  • Wheat bran or Oats 小麥麩皮或麥片

Directions

在一個大碗裡放入麵粉,酵母和鹽。再加 1.5 杯的水,並攪拌麵團。麵團會蓬鬆且黏稠稠的。用保鮮膜覆蓋碗,讓麵團休息至少12~18小時 (看氣候溫度而定,  )麵團會膨脹一倍大。
Combine flour, yeast and salt in a large bowl.  Add 1 5/8 cups water, and stir until blended; dough will be shaggy and sticky. Cover bowl with plastic wrap. Let dough rest at least 12 ~ 18 hours (depends on temperature,) dough will be about double as big.

當麵團好時,表面會佈滿氣泡。把麵團折一次或兩次並撒上麵粉和小麥麩皮。將麵團做成一個球形並用麵粉和麩皮灑滿表面,再用保鮮膜覆蓋休息約一到兩個小時。當麵團超過雙倍的大小並用手指戳不會輕易彈回時就可以進烤箱。
When dough is ready when its surface is dotted with bubbles. Sprinkle it with flour and wheat bran and fold it over on itself once or twice until all covered with flour and wheat bran,  shape dough into a ball. Cover loosely with plastic wrap and let rest about 1 hour. When it is ready, dough will be more than double in size and will not readily spring back when poked with a finger.

把一個6 – 8升的荷蘭烤鍋(重型加蓋烤鍋像是鑄鐵,搪瓷,耐熱玻璃或陶瓷鍋都可)放入烤箱,和烤箱一起預熱到華氏450度。當麵團準備好了時,小心把烤鍋蓋打開將麵團滑入鍋內 (小心!烤鍋非常燙!)如果麵團分佈不均就搖一搖,它烘烤時會平順的。蓋上蓋子先烤三十分鐘。
Preheat oven to 450 degrees. Put a 6- to 8-quart heavy covered pot (cast iron, enamel, Pyrex or ceramic) in oven as it heats together. When dough is ready, carefully open the lid and slide dough over into pot (be careful for the hot pot!)  Shake pan once or twice if dough is unevenly distributed; it will straighten out as it bakes. Cover with lid and bake 30 minutes.

Remove lid and bake another 15 minutes, until loaf is beautifully browned. Cool on a rack.

Note: 做麵包不用一直揉麵團了!只要少少的酵母,加上長時間的發酵,才會醞釀出獨特的麵包香。而這種用荷蘭烤鍋放在烤箱裡烤的方式可以鎖住麵團水分,讓麵包呈現外皮酥脆,裡面鬆軟。
Making bread without keep kneading the dough! Just a bit of yeast, and with a long period of fermentation will create a unique bread aroma. Using a dutch oven to bake can seal in the moisture of the dough, so that the bread will show the crispy skin and soft inside.

Ingredients

  • 1 bag (16 ounces) sweet rice flour 糯米粉
  • 3 eggs 蛋
  • 3 cups milk 牛奶
  • 3/4 ~ 1 cup sugar 糖
  • 1 teaspoon baking powder 泡打粉
  • 2 cups of red bean paste  紅豆罐頭或自己煮的
  • 1 teaspoon vanilla or banana extract 香草精或香蕉精
  • 1 cup coconut powder 椰子粉
  • 2 cups walnuts (chopped) 核桃

Directions

烤箱預熱華氏三百五十度。噴或塗油在一個 9″ x 13″ 大的烤盤内。將糖,蛋,牛奶和香草精或香蕉精在大碗裡混合均勻。慢慢加入糯米粉和泡打粉攪拌均勻到沒有顆粒。
Preheat oven for 350 degrees F. Spray oil over a 9″ x 13″ baking dish. Mix sugar, egg, milk and vanilla (or banana extract) well in a big bowl. Slowly add sweet rice flour and baking power into the batter until smooth.

把紅豆一點一點的加入糯米糊中,上面再撒切碎的核桃和椰子粉。
Spread the red beans little by little into the batter. Sprinkle chopped walnuts and coconut powder on the top.

放入預熱好的烤箱烤五十~六十分鐘。用牙籤插進拿出來沒有黏黏的就好了。等涼了以後切塊享用!
Bake for 50 ~ 60 minutes. Test with a wooden toothpick, if it comes out clean, it is done. Cool down and cut into pieces. Enjoy!

Note: 糯米粉在中國超市可買到,是綠色字包裝 16 oz 的, 不要買錯了。椰子粉在中國超市和美國超市都有的賣。其實是細細的椰絲,不是粉狀的。烤過後的椰絲特別香!糖的份量依個人喜好而定。如果放的是已加糖的紅豆罐頭,糖可以少放一點。
Sweet rice flour can be found at any Chinese supermarket. It’s green label, 16 oz. Coconut powder can be found at both Chinese and American supermarkets. It’s actually thin coconut flake, not really powder. It’s according to personal preference for how much sugar to put in; if using a sweetened red bean from can, you may put less sugar.

  • 1~2 cups Coral Seaweed 乾珊瑚草
  • Onion 洋蔥
  • Celery or cucumber 芹菜或黃瓜
  • Carrot or red bell pepper 紅蘿蔔或紅椒
  • Green onion or cilantro 蔥或香菜
  • 1 teaspoon salt 鹽
  • 1 teaspoon soy sauce 醬油
  • 1 teaspoon sugar 糖
  • 1 teaspoon vinegar 醋
  • 1 teaspoon sesame oil 麻油
  • Garlic (minced) 蒜末
  • Ginger (minced) 薑末
  • Fish sauce (optional) 魚露
  • Chili pepper (optional) 辣椒

Directions

乾的珊瑚草沖掉鹽巴,再泡水至少二十四小時。泡好的珊瑚草會呈透明狀。
Rinse the salt off from the dry coral seaweed. Soak the seaweed in clean water at least 24 hours until it turns transparent.

洋蔥切絲泡水(比較不會太辣),芹菜(或小黃瓜)和紅蘿蔔(或紅椒)切絲備用。將泡好的珊瑚草剪成小段,和切好絲的材料與所有的調味品拌在一起(如愛吃辣的可加入辣椒)。放入冰箱至少兩小時使之入味。吃時上面撒上些香菜或蔥絲,芝麻等。
Cut onion to thin slices and soak in water (to get rid off the spiciness.) Slice celery (or cucumber) and carrot (or red pepper) into strips. Cut soaked coral seaweed into sections. Mix well with all ingredients and seasonings and put in the refrigerator for at least two hours. Garnish top with cilantro or green onion, sesame seeds when serve.

1. 珊瑚海草含有豐富的酵素,礦物質,鈣,鐵,多種纖維和果凍形式蛋白質。尤其對於皮膚護理,素食和每日膳食纖維攝入量有良好幫助。它自然生長,不包含任何人工肥料或化學。
Coral seaweed is rich in enzyme nutrients, minerals, calcium, iron ,multitude fibers and jelly form proteins. It is especially good for skin care, vegetarian diet and daily fiber diet intake. It grows naturally and contains no artificial fertilizer or chemical.

2. 泡開後的珊瑚草可冷藏為以後食用。除了涼拌之外,還可以加入蜂蜜,水果醋和水或水果,打成果汁飲用。或和紅棗,蓮子,白木耳,冰糖等煮成冰糖“燕窩”湯。還也可以放入打果汁機中打成泥狀做成面膜!
Soaked seaweed may leave in refrigerator for later consumption. In addition to the salad, you can also add honey, fruit vinegar and water or fruit and put in a blander to make healthy juice. Or cook with red dates, lotus seeds, white fungus, rock sugar, to make “rock sugar bird’s nest soup”. Also, it can be placed in the blender to make a facial mask!

  • 2 cup seaweed (shredded) 海苔細絲
  • 1/4 cup sweet rice (glutinous) flour 糯米粉
  • 1/4 cup sweet potato flour 地瓜粉
  • 1/4 cup all-purpose flour 麵粉
  • 1 1/2 cup water 水
  • 1 tablespoon olive oil 橄欖油
  • 1 teaspoon salt 鹽
  • Sweet chili sauce 甜辣醬
  • Soy sauce paste 醬油膏
  • Peanut powder 花生粉
  • Cilantro 香菜

Directions

白糯米和黑糯米(紫米)泡水至少三~四小時。
Soak all rices in water for at least 3 ~ 4 hours.

在方形的容器裡放入泡好瀝乾的米,糯米粉,地瓜粉,麵粉,海苔(我用包壽司的海苔剪碎碎),橄欖油,鹽和水混合均勻。放入蒸鍋裡蒸四十分鐘。
Put all rices (drained), sweet rice flour, sweet potato flour, flour, shredded seaweed, olive oil, salt and water in a rectangular or square container. Steam for 40 minutes.

拿出稍涼後再切塊(太熱太黏不好切)。上面刷上點醬油膏,沾些花生粉,再加上甜辣醬和香菜就好了!
Cut into pieces when cool down a little (too sticky to cut while still hot).  Brush on soy sauce paste, dipped some peanut powder, and add sweet chili sauce and cilantro on top.

  • 1 bag of soybean sprouts (1lb or 500g) 黃豆芽一包

Clean soybean sprouts and cook them in boiling water for 3 minutes. Drain and cool down. Julienne both green onion and red pepper.

  • 2 ~ 3 pieces of whole fish fillets 魚片
  • 2 tablespoons cooking wine 米酒
  • 1 tablespoon corn starch 太白粉
  • 1 box tofu 豆腐
  • 4 celery 芹菜
  • 1 tablespoon Pericarpium Zanthoxyli pepper (huajiao) 花椒
  • 8~10 dry hot red chili pepper 乾辣椒
  • 2~3 tablespoons Ning Chi Spicy Pot Sauce 寧記麻辣鍋醬 (put more if want spicier)
  • 2 cups chicken or vegetable broth 高湯
  • Cilantro 香菜
  • Ginger, Garlic 薑,大蒜
  • Yellow bean sprouts 黃豆芽 (optional)

Directions

魚片切塊,放酒和太白粉抓一下。豆腐切塊,芹菜去絲切段。熱油鍋(油不要太熱),放花椒和乾辣椒炒香。喜歡口味重的也可以多放點薑和大蒜一起炒。
Cut fish fillets into pieces, marinate with cooking wine and corn starch. Cut tofu into cubes, celery into sections. Saute Pericarpium Zanthoxyli pepper (huajiao) and dry red chili peppers in medium heat until the favor comes out. Put some ginger and garlic for heavier taste if needed.

Note: 寧記麻辣鍋醬是濃縮的醬汁,味道不錯,但非常辣。最好先放一點嘗一嘗辣度,再決定加多少。魚片放入就不要一直翻動,以免魚片散掉。如果要放黃豆芽,先燙熟放入容器最底,再放入煮好的水煮魚。將魚片換成牛肉片或豬肉片就是好吃的麻辣水煮牛或麻辣水煮肉片了!
Ning Chi Spicy Sauce is a concentrated sauce, very spicy. Best to put a little to taste spiciness first, and then decide how much to put in. When put in fish fillets, not to turn too much to avoid fish to be separated. If you want to put the yellow bean sprouts, boiled first,  put into the bottom of the container, then add the cooked spicy fish on top. Substitute fish with beef or pork to become tasty Spicy Beef Stew or Spicy Pork Stew!

  • 3 ~ 4 large russet potatoes 大馬鈴薯
  • 2 tablespoons olive oil 橄欖油
  • 1 teaspoon paprika 辣椒粉 (西式)
  • 1 teaspoon garlic powder 蒜粉
  • 1 teaspoon onion powder 洋蔥粉
  • 1/4 teaspoon salt 鹽
  • 1/2 teaspoon black pepper powder 黑胡椒粉

Directions

烤箱以華氏425度(攝氏220度)預熱。洗淨馬鈴薯。連皮切成楔塊狀。和橄欖油,辣椒粉,大蒜粉,洋蔥粉和鹽混合均勻。在微波爐高溫熱四分鐘。
Preheat oven to 425 degrees F (220 degrees C). Wash potatoes well. Cut potatoes into wedges (with skin). Mix in olive oil, paprika, garlic powder, onion powder and salt together. Cook in microwave oven on high for 4 minutes.

  • 6 chicken drumsticks 雞腿
  • 1/2 bottle rice wine 米酒 (喜歡重口味的可以放2瓶酒不放水)
  • Ginger 薑 (越多越好)
  • 2 tablespoons sesame oil 麻油
  • Goji 枸杞 (optional)

Directions

這是參考阿基師的做法,比較清淡的口味。將雞腿剁成塊,用熱水川燙,去血水。薑切片或拍碎。
Chop the chicken legs into pieces, put in a pot with boiling water to get rid of scum. Slice or smash gingers.

先用沙拉油爆薑,要把薑炒出味道來,變乾乾的才行。再把雞肉下鍋拌炒。(阿基師說:因為麻油不耐高溫,會越炒越苦,所以要先用沙拉油爆香薑片。)
Saute ginger with cooking oil until the ginger become dry. Stir fry with chicken together. (Sesame oil will taste bitter if under high temperature too long.)

加入水和米酒繼續燉煮直到酒香味都出來,肉也軟了。起鍋前加麻油和枸杞再煮一下就好了。(喜歡重口味的可以只放酒不放水。)
Add water and rice wine and continue to simmer until the rice wine flavor are out and the meat is soft. Add sesame oil and goji and continue to cook a little bit before serve. (For heavier taste, put only 2 bottles of rice wine without any water.)

Note:
1. 這是參考阿基師的做法,比較清淡的口味。根據阿基師,煮麻油雞不可加鹽,不然雞肉會柴(不嫩)。而先用沙拉油炒薑煮出來的湯就不會苦苦的。喜歡重口味的可以都放全酒不放水。
Do not put salt in the soup or the meat will not be tender. Use cooking oil to saute ginger instead of sesame oil to prevent the soup becoming bitter. For heavier taste, put only rice wine (about 2 bottles) without any water.

2. 好友璐璐提供的另種做法:先用乾鍋煎薑片,邊緣焦焦後下黑麻油和雞肉炒至變色。加啤酒去煮。煮好後加雞粉或柴魚粉調味。再依個人喜好加米酒一起煮。
Another recipe from my friend: Saute gingers in a pot (dry, without oil). Add sesame oil and chicken when gingers turn slightly burn, stir-fry until chicken half cooked. Pour a can of beer and cook for a while, add a little chicken powder to enhance favor. Add rice wine (according to personal preference) and cook until done.

  • 10 meatballs 貢丸
  • 3 bean thread noodles 粉絲
  • A few dry shrimps 蝦米
  • 4 cups 雞湯(高湯)
  • Ginger 薑
  • Green onion 蔥
  • Salt 鹽
  • White pepper powder 白胡椒粉

Directions

貢丸切半,絲瓜削皮去籽切成塊狀。薑切絲,入熱油鍋和蝦米一起爆香。放入貢丸,絲瓜一起拌炒一下後加入雞湯(高湯)和切段的蔥,適量的鹽和胡椒一起煮。煮滾後加入粉絲煮至軟即可。
Meatballs cut in half, peeled and seeded loofah cut into pieces. Saute shredded ginger and dry shrimps together. Add meatballs and loofah and stir-fry a little, then add chicken broth and green onion, salt and white pepper powder and cook until boiling. Put in bean thread noddles in the pot until soft.

  • 6 chicken leg quarters 全雞腿
  • 1/4 cup chopped rosemary 迷迭香 (切碎)
  • 1/4 cup salt 鹽

  • 2 tablespoon cooking wine 料酒
  • 4 cloves of garlic 大蒜(拍扁)

Directions

拿一個大鍋,放入所有的材料,加水蓋過雞腿。放入冰箱浸一晚。
Place all chicken legs in a big pot, add all seasonings and water to cover all meat. Put inside the refrigerator for overnight.
Brining the chicken

將雞腿皮向上在烤盤上排好(倒一杯水在底盤裡以免滴下的油汁被烤焦,也保持肉質濕潤。)上面再放些迷迭香和黑胡椒。
Place chicken legs skin side up in a roasting pan (pour a cup of water to the bottom tray to avoid drippings over burned, and also keep moisture. ) Sprinkle some rosemary, and pepper on skin side.

Roast in the oven

放入烤箱以華氏三百五十度烤約四十分鐘,或直到雞腿呈金黃色且皮酥脆。
Roast in a 350°F oven for about 40 minutes or until the chicken legs are golden and crispy.

Note: 鹽漬過的雞腿再烤可以保持肉質濕潤,並幫助入味。迷迭香用乾燥的或新鮮的都可以。
Brining a chicken can help keeping the meat moister, and also helps the taste more flavorful. Either dried or fresh rosemary is ok to use for this dish.

Ingredients

  • 40 oz. (5 cups) frozen corn 冷凍玉米粒
  • 1 cup whipping cream 鮮奶油
  • 1/2 cup milk 牛奶
  • 1 tsp salt 鹽
  • 6 tsp sugar 糖
  • 2 tsp melted butter 融化的奶油
  • 2 tsp flour 麵粉
  • 1/2 cup Parmesan cheese 起士粉
  • pepper (optional) 黑胡椒

Directions

在一個鍋裡混合所有的調味料,除了奶油和麵粉,加入牛奶,小火煮五分鐘至沸騰。
混合融化的奶油與麵粉至鍋中,再加入玉米粒拌勻。轉移到烤箱安全的玻璃烤盤。
上面撒上奶酪,用 ”Broil“ 烤直到棕色,約五分鐘。
Combine all except butter and flour in a pot, adding milk last. Bring to a boil.  Simmer for 5 minutes.
Blend butter with flour.  Add mixture to corn. Mix well.  Transfer into oven safe glass dish.
Sprinkle with cheese.  Broil until brown, approx. 5 minutes.

Note: 這道菜要趁熱吃,最好從烤箱拿出就馬上享用。
Serve immediately.  This dish is meant to be enjoyed while it’s still warm.

  • 12 Prawns 大蝦
  • 1 tablespoon cooking wine 米酒
  • Gingers 薑
  • Green onion 蔥
  • Salt 鹽

Directions

薑切絲,蔥切段。大蝦洗淨清腸泥。先用油將薑爆香,  再放入大蝦大火快炒。加鹽,酒繼續炒到蝦子顏色變紅,最後放入蔥。快炒至汁收乾,不要太久以免蝦煮太老。
Both gingers and green onions cut into sections.  Wash and devine prawns.  First saute gingers until favor comes out, then add prawns,stir fry in high heat.  Add salt, wine and continue to stir fry until the color of prawns turn red. Add green onions at the last. Stir fry until the juice dry up a little. Do not cook too long or the prawns will be too tough.

Note: 蝦子本身就有鮮味了,不需要放太多的調味料。加薑,酒是用來去腥,提味的。
Prawn has good favor itself, no need to put too much seasoning.  Ginger and wine are used to get rid of fishy smell and provide taste.

  • 8 Bean Curds 豆干
  • Gingers 薑
  • 1 teaspoon brown sugar 黑糖
  • 2 tablespoons Shacha Sauce 沙茶醬
  • 2 tablespoons Oyster Sauce 蠔油
  • Basil leaves 羅勒(九層塔)
  • Dried Chili Pepper 乾辣椒
  • 1 tablespoon black sesame oil 黑麻油

Directions

先用沙拉油將薑,辣椒爆香,  乾扁後才加入黑麻油(因為黑麻油不耐高溫, 久了會苦。)
First saute ginger and chili pepper with vegetable oil, after ginger and chili pepper are dried, add in black sesame oil (because black sesame oil will taste bitter if under high temperature too long.)
Bean Curd and gingers 爆香薑

續爆豆干到兩面焦黃, 加入黑糖拌炒上色, 再加蠔油,沙茶醬稍拌,  加水蓋滿豆干, 大火滾五分鐘(豆干裡面才會一個洞一個洞吸滿湯汁),  再轉小火燒至湯汁稍乾,  起鍋前加入九層塔。
Continue to saute bean curds until both sides are little brown.  Add brown sugar, oyster sauce, Shacha sauce, stir.  Add water until covered all bean curds, cook for 3 minutes in high heat (the holes inside bean curds will suck up the water.) Turn the heat to low until the water is dried up. Add basil leaves just before removing from heat.

Note: 薑和辣椒一定要爆到乾扁才入味。糖的用量依個人喜好而定。
Need to saute the ginger and chili pepper until dry in order to have a better favor .  The amount of sugar used according to personal preferences.

  • 1 teaspoon sugar 糖
  • 1 cup all-purpose flour 麵粉
  • 1 1/3 cups water 水
  • 1 teaspoon white pepper powder 白胡椒粉
  • 1 teaspoon garlic powder 大蒜粉
  • Some basil leaves 羅勒(九層塔)

Directions

茄子切片。在一大盤中拌點醬油和糖,讓兩面都浸約十五分鐘。
Eggplant cut into pieces. Mix in soy sauce and sugar in a big plate,  soak both sides for 15 minutes.

用麵粉,鹽,白胡椒,大蒜粉和水作成麵糊。
Mix flour, salt, white pepper powder, garlic powder and water for a batter.

中火熱鍋加油,茄子裹麵糊放入油鍋煎至兩面都金黃色即可。羅勒(九層塔)也入鍋炸做為裝飾。
Heat oil in a pan, eggplant wrapped in batter into the pan to fry in medium heat until golden brown on both sides. Fry basil leaves as well for decoration.

Note: 茄子中含有維生素P,  可增強細胞間的黏著能力,有防治微血管脆裂出血,促進傷口癒合的作用。但油炸的還是克制點吃吧!
Eggplant contains vitamin P, can enhance cell-cell adhesion ability, prevention of brittle fracture capillary bleeding, promote wound healing.

Ingredients

  • 4 chicken breasts (cut into 12 thin pieces) or chicken thighs 雞胸肉或雞腿肉
  • 1 egg 蛋
  • 2 tablespoon flour 麵粉
  • 1/2 teaspoon ground pepper 黑胡椒粉
  • 1 teaspoon salt 鹽
  • 1 teaspoon sugar 糖
  • 1/2 onions, diced 洋蔥
  • 4 tomatoes 番茄
  • 2 cloves garlic, minced 大蒜
  • 1 tablespoon basil 羅勒
  • 1 tablespoon white wine 白酒

Directions

雞胸肉斜切共十二薄片,每片拿刀背敲打幾下。把所有的雞片放入一個大碗,拌入1/2小匙鹽,打好的蛋汁和麵粉。
Chicken breasts cut into 12 thin pieces, tap each piece with the back of the knife. Put all pieces into a big bowl and mix in 1/2 teaspoon salt, egg and flour.

洋蔥,番茄切小粒。先熱鍋加油,把洋蔥粒以中火炒至微微焦,再將番茄粒,1/2 小匙鹽,糖,黑胡椒,白酒加入轉小火蓋鍋煮十五~二十分鐘。打開鍋蓋加入切碎的羅勒繼續燒到醬汁比較濃稠,約十分鐘。
Dice onion and tomato.  Heat up a pan with cooking oil, brown the onion first and then add tomato, 1/2 teaspoon salt, sugar, black pepper powder, white wine , simmer covered in low heat for 15 ~ 20 minutes.  Open the cover, add chopped basil and continue to simmer for another 10 minute or until the sauce gets thicker.

準備一個不沾鍋,熱油,加入雞片煎至兩面呈金黃色。最後在雞扒上淋上煮好的醬汁。
In a non-stick pan, add cooking oil and heat to medium high,  pan fry chicken fillets and brown on each side. Pour sauce over the chicken fillets.

Note: 也可以用雞腿肉代替雞胸肉!上面撒些起士粉更是小孩的最愛!這個醬汁也可用在義大利麵上。
You can also substitute chicken breast with chicken thighs for different texture.  For kids, sprinkle with Parmesan cheese on the top if desired.  The sauce can also be used as spaghetti sauce for spaghetti.

Ingredients

  • 3 cups bread flour 高筋麵粉
  • 1 cup whole wheat flour 全麥麵粉
  • 1 tablespoon
  • 1 1/4 warm water 溫水
  • 1 teaspoon salt 鹽
  • 1 tablespoon sugar 糖
  • 1 tablespoon coconut oil or butter 椰子油或奶油
  • 1 package of yeast or 2 teaspoons yeast 乾酵母
  • 1/4 cup Goji berries 枸杞子
  • egg wash (1 egg +1 tablespoon water)

Directions

麵糰製作有兩種方式:
Two ways to make dough:

1. 傳統式 – 將麵粉, 糖, 溫水, 奶油和酵母放入大盆中, 先用筷子攪至不見水分, 再用手揉到光滑 (也可用攪拌機)。用濕布蓋住靜置一至二個小時 (夏天快, 冬天慢些), 等到麵團發成一倍大, 手指壓入不會彈回即可。
Traditional way – Put bread flour, wheat flour, sugar, warm water, butter and yeast into large bowl. First stir with chopsticks until all water is gone. Then rub the dough until smooth (can also use mixer). Cover with a damp cloth for one to two hours (faster in the summer, slower in the winter.) Wait until the dough grows double.

2. 懶人式 – 將麵粉, 糖, 溫水, 油和酵母放入麵包機。用 “dough” 的功能就好了。
Lazy way – Put bread flour, wheat flour, sugar, warm water, butter and yeast into bread maker. Use “dough” function.

烤箱預熱400度華氏。麵團用刀切一半,  每一半整型為圓橢狀,放在撒上麵粉的烤盤加蓋放置十五至二十分鐘。
Cut dough in half. Make each half into round shape and put on a floured bake pan for 15 to 20 minutes.

或把其中一半的麵團分成十二份,放入做小蛋糕的烤盤中(裡面撒麵粉。)
Or,  divide half of the dough into 12 small dough, and put in a cupcake pan (sprinkle flour in each cup.)

將準備好的麵團上刷上蛋汁。

放入預熱的烤箱,立刻將烤箱溫度降至350度,並噴水保溼。五分鐘後再噴一次水。烤二十至二十五分鐘。拿出待冷。
Put in the preheated oven, reduce temperature to 350 degree and spray water to keep moisture. Spray again after 5 minutes. Bake for 20 to 25 minutes.  Take out of the oven and cool down.
