Ingredients

  • 2 rolls Croissant dough 可頌麵團
  • 1 box (8 oz) Cream Cheese
  • 2 whole eggs 全蛋
  • 1 egg yolk 蛋黃
  • 2~3 cups red bean paste (homemade or canned) 紅豆沙
  • 1/2 cup almond slices 杏仁片
  • Vanilla extract 香草精

Directions

兩杯紅豆泡水後用電鍋蒸熟,加糖拌勻。或是用罐頭豆沙也行 (但罐頭的會比較甜)。
Soak 2 cups of red bean and cook in the rice cooker, add sugar, mix well. Or use canned red bean paste (sweeter).

將一盒 Cream Cheese 放入溫水裏使之變軟。再加兩個蛋和幾滴香草精用攪拌器打勻。烤箱預熱350度。
Soften a box of Cream Cheese in warm water.  Add two eggs and a few drops of Vanilla Extract. Blend well until smooth. preheat ovan for 350F。

烤盤上塗上一層奶油後,鋪上一層 Croissant dough。先塗上一層紅豆沙,再把打好的 Cream cheese 塗在豆沙上,輕輕地抹勻。
On a butter coated baking sheet, place a layer of Croissant dough; then put a layer of red bean paste. Gently spread Cream cheese mix evenly on the top.

最上面再鋪一層 Croissant dough. 上面灑杏仁片,塗上蛋汁(一個蛋黃加幾滴水打勻)。
Put a layer of Croissant dough on the very top. Sprinkle with almond slices, coated with egg water (an egg yolk plus 2 tsp water).

放進已預熱的烤箱烤25~35分鐘,直到表面金黃就可以拿出來切(順著三角形的印子)。
Bake for 25 to 35 minutes until golden brown.

Note:
Croissant dough 放在室溫內一下再拿出來鋪在烤盤上會比較鬆軟點。

Ingredients

  • 3 cups bread flour, more for dusting 高筋麵粉
  • 1/4 teaspoon instant yeast 乾酵母
  • 1 1/4 teaspoons salt 鹽
  • 1 1/2 cups water 水
  • Wheat bran or Oats 小麥麩皮或麥片

Directions

在一個大碗裡放入麵粉,酵母和鹽。再加 1.5 杯的水,並攪拌麵團。麵團會蓬鬆且黏稠稠的。用保鮮膜覆蓋碗,讓麵團休息至少12~18小時 (看氣候溫度而定,  )麵團會膨脹一倍大。
Combine flour, yeast and salt in a large bowl.  Add 1 5/8 cups water, and stir until blended; dough will be shaggy and sticky. Cover bowl with plastic wrap. Let dough rest at least 12 ~ 18 hours (depends on temperature,) dough will be about double as big.

當麵團好時,表面會佈滿氣泡。把麵團折一次或兩次並撒上麵粉和小麥麩皮。將麵團做成一個球形並用麵粉和麩皮灑滿表面,再用保鮮膜覆蓋休息約一到兩個小時。當麵團超過雙倍的大小並用手指戳不會輕易彈回時就可以進烤箱。
When dough is ready when its surface is dotted with bubbles. Sprinkle it with flour and wheat bran and fold it over on itself once or twice until all covered with flour and wheat bran,  shape dough into a ball. Cover loosely with plastic wrap and let rest about 1 hour. When it is ready, dough will be more than double in size and will not readily spring back when poked with a finger.

把一個6 – 8升的荷蘭烤鍋(重型加蓋烤鍋像是鑄鐵,搪瓷,耐熱玻璃或陶瓷鍋都可)放入烤箱,和烤箱一起預熱到華氏450度。當麵團準備好了時,小心把烤鍋蓋打開將麵團滑入鍋內 (小心!烤鍋非常燙!)如果麵團分佈不均就搖一搖,它烘烤時會平順的。蓋上蓋子先烤三十分鐘。
Preheat oven to 450 degrees. Put a 6- to 8-quart heavy covered pot (cast iron, enamel, Pyrex or ceramic) in oven as it heats together. When dough is ready, carefully open the lid and slide dough over into pot (be careful for the hot pot!)  Shake pan once or twice if dough is unevenly distributed; it will straighten out as it bakes. Cover with lid and bake 30 minutes.

打開蓋子再烤十五分鐘,直到麵包表皮成漂亮焦黃色。拿出放在架上降溫。
Remove lid and bake another 15 minutes, until loaf is beautifully browned. Cool on a rack.

Note: 做麵包不用一直揉麵團了!只要少少的酵母,加上長時間的發酵,才會醞釀出獨特的麵包香。而這種用荷蘭烤鍋放在烤箱裡烤的方式可以鎖住麵團水分,讓麵包呈現外皮酥脆,裡面鬆軟。
Making bread without keep kneading the dough! Just a bit of yeast, and with a long period of fermentation will create a unique bread aroma. Using a dutch oven to bake can seal in the moisture of the dough, so that the bread will show the crispy skin and soft inside.

Ingredients

  • 3 cups bread flour 高筋麵粉
  • 1 cup whole wheat flour 全麥麵粉
  • 1 tablespoon
  • 1 1/4 warm water 溫水
  • 1 teaspoon salt 鹽
  • 1 tablespoon sugar 糖
  • 1 tablespoon coconut oil or butter 椰子油或奶油
  • 1 package of yeast or 2 teaspoons yeast 乾酵母
  • 1/4 cup Goji berries 枸杞子
  • egg wash (1 egg +1 tablespoon water)

Directions

麵糰製作有兩種方式:
Two ways to make dough:

1. 傳統式 – 將麵粉, 糖, 溫水, 奶油和酵母放入大盆中, 先用筷子攪至不見水分, 再用手揉到光滑 (也可用攪拌機)。用濕布蓋住靜置一至二個小時 (夏天快, 冬天慢些), 等到麵團發成一倍大, 手指壓入不會彈回即可。
Traditional way – Put bread flour, wheat flour, sugar, warm water, butter and yeast into large bowl. First stir with chopsticks until all water is gone. Then rub the dough until smooth (can also use mixer). Cover with a damp cloth for one to two hours (faster in the summer, slower in the winter.) Wait until the dough grows double.

2. 懶人式 – 將麵粉, 糖, 溫水, 油和酵母放入麵包機。用 “dough” 的功能就好了。
Lazy way – Put bread flour, wheat flour, sugar, warm water, butter and yeast into bread maker. Use “dough” function.

烤箱預熱400度華氏。麵團用刀切一半,  每一半整型為圓橢狀,放在撒上麵粉的烤盤加蓋放置十五至二十分鐘。
Cut dough in half. Make each half into round shape and put on a floured bake pan for 15 to 20 minutes.

或把其中一半的麵團分成十二份,放入做小蛋糕的烤盤中(裡面撒麵粉。)
Or,  divide half of the dough into 12 small dough, and put in a cupcake pan (sprinkle flour in each cup.)

將準備好的麵團上刷上蛋汁。

放入預熱的烤箱,立刻將烤箱溫度降至350度,並噴水保溼。五分鐘後再噴一次水。烤二十至二十五分鐘。拿出待冷。
Put in the preheated oven, reduce temperature to 350 degree and spray water to keep moisture. Spray again after 5 minutes. Bake for 20 to 25 minutes.  Take out of the oven and cool down.

  • 2 cup rye flour 黑麥
  • 1 1/4 cup warm water
  • 1 package of  yeast (or 2 tsp yeast)
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 teaspoon butter
  • egg wash (1 egg+1 tablespoon water)

Directions

麵糰製作有兩種方式:

1. 傳統式 – 將麵粉, 糖, 溫水, 奶油和酵母放入大盆中, 先用筷子攪至不見水分, 再用手揉到光滑 (也可用攪拌機)。用濕布蓋住靜置一至二個小時 (夏天快, 冬天慢些), 等到麵團發成一倍大, 手指壓入不會彈回即可。

2. 懶人式 – 將麵粉, 糖, 溫水, 油和酵母放入麵包機。用 “dough” 的功能就好了。

在烤盤上撒麵粉防黏,將麵團分成十份,用手整型成圓坨型,讓表面成光滑狀, 把不整齊的部份塞在下面。

整型好的麵團上面再撒麵粉,蓋上布或是保鮮膜,靜置三十分鐘直到麵團長大。天氣冷可能要久一點, 天氣熱會快一點。

烤箱預熱400F。麵團塗上加水的蛋汁,放入烤箱。用噴水壺在烤箱內噴一些水,並將烤箱溫度調成350F。兩分鐘後,再噴一次水後繼續烤。約十到十二分鐘成金黃色就好了。拿出麵包稍涼後再吃。

Note: 烤箱先高溫是要麵團再膨漲,會表面脆裡面軟。噴水讓烤箱裡有蒸汽不會太乾。也可用 wheat flour 取代 rye flour 做小麥麵包。

 

玉米麵包 Corn Bread

Ingredients

Materials A:

  • 1 cup milk
  • 1 egg
  • 1 1/2 teaspoon salt
  • 5 tablespoon unsalted butter
  • 4 tablespoon sugar
  • 3 1/2 cup bread flour
  • 1 1/2 tablespoon gluten flour
  • 2 1/2 teaspoon yeast
Material B:
  • 1 battered egg
Materials C:
  • 1 cup corn
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon olive oil

Directions

Add Material A into bread machine, set to stop at bread dough finished. It’s important to add the ingredients by the order of list, The bread won’t be good if you add yeast into milk and salt. Butter need to be heated to liquid so you can use tablespoon to measure.

The whole bread dough process in bread machine is about 1.5 hours in my bread machine. after it stops, leave it there to rise for another hour.

Put aluminum foil on baking rack. Brush adequate amount of olive oil on it so later the bread dough won’t stick.

Use scissor to cut the bread dough into pieces and put them on the foil.
Keep equal space.

Put it in warm place for another hour of raise. If your oven have
‘Proofing’ function, use it. Otherwise, it may work by putting the
shelf in the top position and turn on the oven light.

After 2nd raise, brush Material B battered egg on the dough.
Then put generous amount of mixed Materials C on top of the dough, because bread will expand during the baking process but corn won’t..

Preheat oven to 350F. Then bake for 15 minutes to golden color.

Note: Gluten flour can be purchased at Safeway or Whole foods.  The corn can be replaced by green onion to make Green Onion bread. The same ingredient ratio can also make butter dinner roll. Just bury tiny piece of butter inside the dough between 2 raise.

Ingredients (2 breads)

麵糰 Dough:

  • 4 cup all purpose flour 中筋麵粉
  • 1 1/4 cup warm water 溫水
  • 1 package of  yeast (or 2 tsp yeast) 酵母
  • 1/2 tablespoon sugar 糖
  • 1 teaspoon salt 鹽
  • 1 teaspoon cooking oil 油

內餡 filling:

  • 1 1/2 cup minced green onion 蔥花
  • 2 tablespoons cooking oil 油
  • 1/2 cup sesame seeds 芝麻
  • 1 teaspoon salt 鹽

Directions

將麵粉, 糖, 溫水, 油和酵母放入大盆中, 先用筷子攪至不見水分, 再用手揉到光滑 (也可用攪拌機)。用濕布蓋住靜置一至二個小時 (夏天快, 冬天慢些), 等到麵團發成一倍大, 手指壓入不會彈回即可。
Put flour, sugar, warm water and yeast into a large bowl. Mix until water is gone and use hand or mixer to knead to smooth. Cover with a damp cloth aside for one to two hours (faster in summer, slower in winter.)

2. 懶人式 Lazy way -
將麵粉, 糖, 溫水, 油和酵母放入麵包機。用 “dough” 的功能就好了。
Put flour, sugar, warm water and yeast into a bread maker. Use “dough” function to make the dough.

 

將發好的麵糰分成兩份(作兩個大餅),用桿麵棍捍平。
Divide dough into two (for two bread), flatten with a rolling pin.

Dough in half抹上一大匙油, 灑鹽和蔥花撲滿全部表面。用刀從中間切一刀 (像切蛋糕一樣), 把捍平的麵糰由切處折起約三層 (這樣才會有層層的青蔥而不是只有一層)。記住將邊邊捏好不讓蔥餡外露。
Spread a tablespoon oil and sprinkle with salt and green onion on all surfaces. Use a knife to cut from the middle (like a cake-cutting), fold up the dough to three layers (so that there are green onion in every layer.) Make sure to seal on the edges of the dough.

再將折好的麵糰整型, 桿成大餅狀再加蓋放置十五分鐘等待下鍋。(也可放入烤箱用100F的餘溫來發, 會快一點。)
Shape the dough into rounded, flatten and cover for 15 minutes (faster to put in a oven at 100F residual heat.)

將平底鍋放少許油, 把準備好的麵團 (又發大了一些) 放入鍋中。上面噴一點水, 灑滿芝麻 (稍壓一下), 再放入 1/4 杯水加蓋用中小火煎約 8 ~ 10 分鐘。
Put a little oil in a pan, and put the prepared dough (a little larger) into the the pan. Spray a little water on the surface of the dough, sprinkle sesame seeds (slightly press down), then add 1 / 4 cup of water, cover, cook with medium heat for about 8 to 10 minutes.

此時麵團會膨脹,芝麻也會黏在表面。等水分燒乾, 麵團底部也已煎成金黃色, 就可翻面再煎約 6 分鐘好了 (翻面時可再加一點油。)
At this point, the dough will be expanded, sesame seeds will stick to the surface. Until water boiled away, the bottom has pan fry to golden color. Turn over to pan-fry for another 6 minutes, (add a little oil when turn it over.)

Note: 1. 這是一位很會做麵食的媽媽教我的,方法和一般市面上的不同。因為加了水加蓋來煎,裡面特別鬆軟,外皮煎的脆脆的。口感比外面賣的乾乾的大餅還好吃。每家爐子火力不同,和個人喜好不同,要自行斟酌時間煎到滿意為止。
2. Dry Active Yeast 可以直接和在麵粉,水裡來發,效果一樣好的。

也可以在內餡加入培根粒粒或是換成紅豆餡, 也是很好吃哦!
