Ingredients

  • 10 eggs 雞蛋 (depends how many people)
  • 1/3 cup mayonnaise 美奶滋
  • 2 teaspoons dijon mustard 狄戎芥末醬
  • 1/2 teaspoon garlic powder 蒜粉
  • Salt and pepper 鹽,胡椒
  • Paprika 匈牙利辣椒粉
  • Parsley 巴西里香芹粉

Directions

在大的鍋裡放入蛋和冷水,水要蓋過蛋。以中火把水燒滾後,關火,加蓋燜至少十五分鐘。再把蛋放入冷水裡冷卻。剝蛋殼後將蛋對半切(縱向切)。
Put the eggs in a large pot and boil the eggs with water at medium heat. Remove from heat and let sit covered for 15 minutes. Put eggs in the cool water. Peel the eggs. Slice each egg in half (lengthwise).

將蛋黃挖出和蛋白分開放。蛋黃裡加入美奶滋,芥末醬,蒜粉,一點鹽和胡椒粉攪拌均勻。用小匙或擠花袋把拌好的蛋黃填回蛋白的凹槽裡。
Separate egg yolks and egg whites. Mash up the yolks and add mayonnaise, mustard, garlic powder, and a little bit salt and pepper in a bowl. Mix well. Use spoon or piping bag to put the egg yolk mixture back into each egg white “cup”.

上面撒上匈牙利辣椒粉和巴西里香芹粉。
Sprinkle with paprika and parsley on top.

Note: 魔鬼蛋通常是作為冷盤。是節慶和派對中常常出現的開胃小菜。上面再加點壽司的那種小魚蛋,看起來更豪華呢!

Deviled eggs are usually served cold. They are served as an appetizer and are a common holiday or party food. Add tobiko (flying fish roe) for more luxury look.

給不愛吃青菜的人一個好辦法!

Spinach and Bacon Quiche 法式菠菜培根派

Ingredients

  • 1/2 cup light mayonnaise
  • 1/2 cup evaporated milk (or milk)
  • 4 eggs, lightly beaten
  • 4 strips bacon
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1/4 cup chopped onion
  • 1/8 teaspoon white paper
  • 1/2 cup shredded Swiss cheese
  • 1/2 cup shredded Cheddar cheese
  • 1 (9 inch) unbaked pie crust (or ready-make unbaked pie shell)

Directions

Preheat oven to 400 degrees F. Place crust in ungreased 9-inch pie pan. Press crust firmly against sides and bottom. Generously prick bottom and sides with a fork.  Put foil on the edge to prevent burning. Bake for 6~8 minutes. It’s better to line with foil and fill with pie weights or dried beans.

Spinach and Bacon Quiche

Whisk together mayonnaise, eggs, milk and white pepper until smooth. Cook the bacon over medium heat in a skillet until crisp for 8 minutes. transfer to a paper towel to drain.

Layer spinach, onion, Swiss cheese in crust. Pour in egg mixture, sprinkle bacon, and Cheddar cheese on the top. Bake in preheated oven at 375 F for 30 minutes until golden and filling is set. Serve warm.

Note: Quiche is a classic dish of French cuisine.  You can also put other vegetables, shrimps, meat in the filling, like ham and broccoli.
